Job Description

Job Summary: We are seeking a highly skilled and experienced Beverage Operations Manager to join our team at Colonial Downs Group LLC. The successful candidate will be responsible for the overall operation and profitability of assigned venues, ensuring the development and maintenance of well-performing teams, achieving financial and enterprise objectives, and maintaining proper inventory control.

Key Responsibilities:

  • Supervise Beverage Operations: Supervise the operation of bars to maximize profitability, minimize legal liability, and conform to alcoholic beverage regulations.
  • Ensure Compliance: Adhere to Department policies and procedures and ensure team members are trained in all requirements.
  • Monitor Operations: Continuously evaluate operations to determine if efficiencies would be beneficial.
  • Make Recommendations: Make recommendations for policy/procedure modifications when required in advance of implementing changes.
  • Stay Compliant: Monitor changes in law or regulations to stay in compliance with alcohol service.
  • Develop Security Infrastructures: Assist in development of security infrastructures and policies in accordance with existing organizational policies and procedures to support the newly established security functions.
  • Act as a Thought Leader: Act as a thought leader and innovator by identifying, developing, and continuously improving security and training practices.
  • Manage Headcount: Manage assigned headcount to ensure expenses remain within budget, overtime is minimal, all team members are properly trained to perform their duties, adequate staff is hired, trained and reports to work for all shifts, all required ServSafe, Food Handlers are maintained by assigned staff and all HACCP procedures and Health and Safety regulations are adhered to.
  • Develop a Highly Energized Culture: Create guidelines to sustain a highly energized culture and engaged and enthusiastic work environment that ensures an optimal restaurant and entertainment experience.
  • Develop Training Programs: Develop training programs that ensure high-quality service, including training in service, and food and beverage products that are offered.
  • Manage Budgets: Manage budgeted revenue, beverage cost, expense, headcount, and profit for assigned venue. Provide explanation of any unfavorable variance monthly and prepares and implements action plan to track favorably to budget by end of fiscal year.
  • Monitor Customer Satisfaction: Closely monitor customer satisfaction and addresses and resolves customer complaints promptly.
  • Investigate Incidents: Direct internal and external investigations in conjunction with Human Resources to gather, analyze and document information regarding incidents and losses, identify responsible parties, and identify gaps or failures in internal control processes.

Regulatory and Compliance Responsibilities:

  • Attend Training Sessions: Attend required training sessions offered by the Company.
  • Obtain Licenses: Obtain and retain required license(s).
  • Perform Duties: Perform the duties described in compliance with local laws and regulations.
  • Ensure Minors are Protected: Take the necessary steps to ensure minors are not allowed to gamble or loiter in gambling areas, drink alcoholic beverages, or purchase tobacco.
  • Have Knowledge of Laws and Regulations: Have knowledge of the ordinances, regulations, laws, policies, and procedures relating to the Team Member's department.
  • Report Wrongdoing: Report any acts of wrongdoing of which the Team Member may have knowledge.

Education, Training, and Experience:

  • Bachelor's Degree: Bachelor's degree in restaurant management or related field preferred.
  • Minimum Five Years Experience: Minimum five (5) years beverage service supervisory/management in a high-volume entertainment bar restaurant with high-quality food, extensive beer and spirits offering, with a high-energy atmosphere with live entertainment.
  • Minimum Four Years Experience: Minimum of four (4) years' progressive supervisory and managerial experience in a beverage environment, directing, leading and coaching others to exceed organizational standards; must have experience in a high-volume, multi-venue or casino facility.
  • Equivalent Combination: Equivalent combination of education and progressive, relevant, and direct experience may be considered in lieu of minimum educational/experience requirements indicated above.
  • Knowledge of Liquor/Beer/Wine Product: Must possess advanced knowledge of liquor/beer/wine product and mixology.
  • Knowledge of OSHA and ABC Regulations: Must possess knowledge of current OSHA and Alcoholic Beverage Control (ABC) regulations.
  • Microsoft Proficiency: Intermediate proficiency in Microsoft (Word, Excel, Power Point and Outlook) is required.
  • Age and Physical Demands: Must be at least eighteen (21) years of age. Must be able to stand for longer than 8 hours. The ability to lift, push and pull up to 20 pounds.
