Culinary Operations Leader

Join our inaugural team at our British-inspired gastropub, "Truth be Told," which emphasizes classic British cuisine and dishes. The menu will adapt with the seasons, showcasing both the casual charm and the refined cooking methods of a traditional tavern. This role presents a fantastic opportunity to position the restaurant as a premier dining destination in the Hyde Park region.
Key Responsibilities
- Employ effective leadership abilities to inspire, engage, and develop team members.
- Identify and relay training requirements to the Executive Chef.
- Oversee all facets of the hotel's culinary production while ensuring profitable food and beverage operations and the highest standards of product quality and service.
- Manage the setup and breakdown of a designated area, including thorough cleaning of the workspace and adjacent areas.
- Monitor storage and holding operations, including stocking, food rotation, and ensuring compliance with food service sanitation standards.
- Assist in training initiatives regarding food execution and all aspects of food safety, sanitation, and quality assurance standards.
- Maintain food quality in accordance with the Chef's specifications; guarantee a consistent product with each service.
- Communicate menu items to Front of House team members, address allergy concerns, and respond to general inquiries. Maintain comprehensive knowledge of all menu items and beverage offerings.
- Understand and enforce all local health sanitation regulations.
- Ensure a safe and clean working environment.
- Possess accurate knowledge of all menu offerings.
- Engage positively and interact with all hotel departments.
- A strong desire for continuous learning and the ability to maintain a professional demeanor.
- Education: High school diploma or equivalent.
- Experience: Minimum of 2 years in a fine dining or upscale casual setting.
- Thorough understanding of various cooking methods, ingredients, equipment, and procedures.
- Flexibility to work various shifts, including evenings, weekends, and holidays.
- Excellent verbal and written communication skills.
- Proficiency in English is required; a second language is a plus.
- Strong organizational skills, including follow-up, time management, and the ability to multitask in a fast-paced environment.
- Ability to communicate effectively and interact positively with all hotel departments.
- Capability to lift and carry items weighing up to 50 lbs.

The Study at University of Chicago, the third property of the Study Hotels brand, is situated in Chicago, Illinois.
This 167-room hotel features a variety of suites, including our signature Study accommodations, a 100-seat Restaurant/Tavern, and 4,700 square feet of banquet and meeting space, including a 2,500 square foot Winter Garden designed for social events, along with a state-of-the-art fitness center. The hotel provides areas for discovery and connection for meaningful guest interactions, including active gallery space, cultural programming, and unique features such as custom writing desks with postcards to encourage guests to connect with family and friends—postage free. Guest rooms and public areas are filled with natural light and a bright, uplifting palette of textures and materials, reflecting contemporary residential living.
