Job Summary

The Executive Culinary Director is responsible for overseeing all culinary functions for Chamonix Casino Hotel. This position will work continually to improve guest and employee satisfaction while maximizing the financial performance in all areas of responsibility.

Key Responsibilities:
  • Culinary Leadership: Oversees all food preparation areas, including banquets, room service, restaurants, and employee dining room.
  • Menu Planning and Development: Plans and creates seasonal menus that meet the highest standards of quality and presentation.
  • Inventory Management: Purchases and manages inventory to ensure optimal stock levels and minimize waste.
  • Culinary Program Implementation: Rolls out new culinary programs in conjunction with marketing, banquets, and culinary team.
  • Team Management: Leads the kitchen management team, including Sous Chefs and Restaurant Managers and Supervisors.
  • Operational Excellence: Provides direction for all day-to-day operations and ensures property policies are administered fairly and consistently.
  • Staffing and Scheduling: Reviews staffing levels to ensure that guest services and operational needs and financial objectives are met.
  • Financial Management: Manages department controllable expenses, including food costs, supplies, uniforms, and equipment.
  • Brand Standards: Knows and implements brand standards for culinary operations.
  • Training and Development: Demonstrates new cooking techniques and equipment to staff and instills safety and sanitation habits in all employees.
  • Guest Hospitality: Displays leadership in guest hospitality, exemplifies excellent customer service, and creates a positive atmosphere for guest relations.
  • Problem Resolution: Responds to and handles guests' problems and complaints.
  • Culinary Expertise: Has thorough knowledge of food handling and preparation techniques and ensures that the level of quality, portion control, and plate presentation is adhered to consistently.
  • Employee Development: Coaches and counsels employees to reflect the highest service standards and procedures.
