Job Summary

Chamonix Casino Hotel is seeking a highly skilled and experienced Executive Culinary Director to oversee all culinary functions and lead our culinary team to excellence. As a key member of our management team, you will be responsible for driving business growth, improving guest satisfaction, and maintaining high food standards.

Key Responsibilities:
  • Culinary Leadership: Lead and manage the culinary team, including Sous Chefs, Restaurant Managers, and Supervisors, to ensure seamless day-to-day operations.
  • Menu Planning and Development: Plan and create seasonal menus that meet the highest standards of quality, presentation, and flavor, while ensuring profitability and consistency.
  • Inventory Management: Oversee the purchasing and management of inventory, including food, supplies, uniforms, and equipment, to minimize waste and optimize costs.
  • Cost Control: Develop and implement guidelines and control procedures to manage department controllable expenses, including food costs, supplies, uniforms, and equipment.
  • Staffing and Training: Review staffing levels to ensure that guest services and operational needs are met, and provide training and development opportunities to enhance culinary skills and knowledge.
  • Brand Standards: Ensure that all culinary operations meet and exceed brand standards, including food quality, presentation, and consistency.
  • Guest Hospitality: Demonstrate leadership in guest hospitality, exemplify excellent customer service, and create a positive atmosphere for guest relations.
  • Problem Resolution: Respond to and handle guest problems and complaints in a professional and courteous manner.
Requirements:
  • Thorough knowledge of food handling and preparation techniques.
  • Ability to instill safety and sanitation habits in all employees.
  • Excellent leadership, communication, and interpersonal skills.
  • Ability to work in a fast-paced environment and prioritize tasks effectively.
  • High school diploma or equivalent required; culinary degree or certification preferred.
