About the Role:

We are seeking a highly skilled and experienced Sous Chef to join our team at the Buffalo Marriott at LECOM HARBORCENTER. As a key member of our culinary team, you will be responsible for assisting the Executive Chef in managing the day-to-day operations of the kitchen, ensuring that all menu items are presented consistently and to the highest standards.

Key Responsibilities:

  • Menu Item Presentation and Consistency: Ensure that all menu items are presented consistently and to the highest standards, maintaining the quality and presentation of dishes.
  • Creative Specials: Develop and implement unique specials for catered hotel events, working closely with the Executive Chef to ensure that all dishes meet the highest standards.
  • Training and Development: Work directly with the Executive Chef to ensure that all front-line culinary associates are trained and monitored to the highest standards.
  • Associate Management: Assist in the hiring and rewarding of associates on a daily basis, ensuring that all staff are motivated and performing to the highest standards.
  • Prioritization and Organization: Demonstrate a keen ability to prioritize, organize, delegate, and ensure managerial follow-through, ensuring that all tasks are completed efficiently and effectively.
  • Policy Implementation: Implement and carry out organizational policies, procedures, and applicable laws, ensuring that all staff are aware of and adhere to these policies.
  • Problem-Solving: Assist the Executive Chef in addressing complaints and resolving problems, ensuring that all issues are resolved promptly and to the satisfaction of all parties.

Requirements:

  • Culinary Degree: Possess a culinary degree from a recognized institution.
  • High-Volume Experience: Have experience in a high-volume culinary position, preferably in a hotel environment.
  • Banquet and A La Carte Experience: Have experience in banquet and A La Carte environments, with a strong understanding of menu planning and execution.
  • Priority Management: Demonstrate the ability to manage multiple priorities in a fast-paced environment, ensuring that all tasks are completed efficiently and effectively.
