The Culinary Operations Manager at The Ranch at Las Colinas (TRLC) is dedicated to crafting exceptional dining experiences. This role collaborates closely with the Chef De Cuisine (CDC) to ensure seamless operations from concept to execution. The manager is pivotal in driving both revenue and guest satisfaction through a menu celebrated for its refined cowboy cuisine.

Key Responsibilities:

Culinary Leadership

  • Assist the CDC in developing, presenting, and refining the menu, incorporating insights from both traditional and contemporary Texas culinary trends.
  • Innovate by utilizing cutting-edge techniques, equipment, and ingredients to remain at the forefront of culinary advancements.
  • Collaborate with the CDC to design and implement special event menus that provide extraordinary dining experiences.
  • Ensure that line and prep cooks master the ingredients, preparation methods, flavors, and presentation of all menu items.
  • Continuously oversee food preparation and presentation to guarantee that only the finest dishes leave the kitchen.

Team Development

  • Support the recruitment, training, and retention of top culinary talent.
  • Equip team members with the necessary knowledge, tools, and resources to excel in their roles.
  • Foster a vibrant workplace culture that attracts new talent and empowers team members to perform at their best.
  • Uphold high standards through consistent coaching and constructive feedback.
  • Mentor aspiring leaders within the kitchen to maintain rigorous culinary and cleanliness standards.

Quality Assurance

  • Regularly assess ingredients to ensure the highest quality is consistently achieved.
  • Oversee the requisition, purchasing, storage, and inventory of both food and non-food items.
  • Accountable for adhering to standard recipes and techniques to ensure consistently high-quality food preparation and presentation.
  • Promote and maintain high standards of food safety, hygiene, and accident prevention.

Business Management

  • Implement measures to control food costs and manage portion sizes effectively.
  • Participate in Culinary Leadership meetings, prepared to provide updates on culinary operations and address any business-related needs or challenges.
  • Ensure the kitchen equipment and fixtures are maintained to the highest cleanliness standards, addressing maintenance issues proactively.
  • Consistently execute proper shift deployment and communicate necessary adjustments as required.

  • Strong understanding of food safety and kitchen safety protocols.
