POSITION SUMMARY

Responsible for the overall effectiveness of daily pastry operations.

Demonstrates innovative baking and decoration skills by actively engaging in tasks while leading the team in crafting high-quality and consistent pastries across all service areas.

Strives to enhance guest and employee satisfaction while adhering to the operating budget. Oversees all pastry sections to guarantee a uniform, superior product is delivered. Accountable for mentoring and developing team members, including direct reports. Must ensure compliance with sanitation and food safety standards. Responsibilities include managing all pastry food preparation areas.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years of experience in culinary, food and beverage, or a related professional field.
OR

  • 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or a related discipline; 2 years of experience in culinary, food and beverage, or a related professional field.

Leading the Culinary Teams

  • Supervises and directs staff; possesses sufficient knowledge of employee roles to perform duties in their absence.
  • Oversees and coordinates the activities of cooks and personnel involved in pastry preparation.
  • Utilizes interpersonal and communication skills to lead, influence, and motivate others; promotes sound financial and business decision-making; exemplifies integrity and honesty; leads by example.
  • Fosters mutual trust, respect, and collaboration among team members.
  • Acts as a role model to illustrate appropriate behaviors.
  • Ensures and maintains employee productivity levels.
  • Supervises pastry preparation shifts.
  • Communicates performance expectations in line with job descriptions for each role.
  • Establishes and nurtures open, collaborative relationships with employees and ensures they do the same within the team.
  • Ensures ongoing communication with employees to raise awareness of business objectives and convey expectations, recognize performance, and achieve desired outcomes.
  • Leads shifts while personally preparing food items and fulfilling requests based on specified requirements.
  • Represents the organization in media events as required.
  • Conducts pastry classes for customers and the community.

Ensuring Culinary Standards and Responsibilities are Met

  • Develops, designs, or creates new concepts and items for the pastry kitchen.
  • Adheres to proper handling and temperature control of all food products.
  • Maintains food preparation handling and proper storage standards.
  • Recognizes superior quality products, presentations, and flavors.
  • Ensures employees maintain necessary food handling and sanitation certifications.
  • Ensures compliance with all relevant laws and regulations.
  • Assists the Executive Chef with menu development related to pastry.
  • Operates and maintains all departmental equipment and reports malfunctions.
  • Prepares and cooks a variety of foods, either regularly or for special guests or events.
  • Assists in determining food presentation and creates decorative food displays.

Ensuring Exceptional Customer Service

  • Monitors and promotes service behaviors that exceed customer expectations.
  • Manages daily operations, ensuring quality standards and meeting customer expectations consistently.
  • Supports service by communicating and assisting employees in understanding guest needs, providing guidance, feedback, and individual coaching as necessary.
  • Sets a positive example for guest relations.
  • Empowers employees to deliver outstanding customer service.
  • Addresses and resolves guest issues and complaints.
  • Engages with guests to gather feedback on product quality and service levels.
  • Emphasizes guest satisfaction during all departmental meetings and focuses on continuous improvement.

Maintaining Culinary Goals

  • Establishes and supports the achievement of culinary goals related to pastry products, including performance, budget, and team objectives.
  • Provides specific guidance to prioritize, organize, and accomplish daily pastry operations tasks.
  • Supports procedures for food and beverage portion and waste management.
  • Procures necessary supplies and manages inventories in accordance with budgetary constraints.
  • Trains employees in safety protocols.

Managing and Conducting Human Resource Activities

  • Identifies the developmental needs of others and provides coaching, mentoring, or assistance to enhance their knowledge or skills.
  • Participates in training staff on menu items, including ingredients, preparation methods, and unique flavors.
  • Ensures property policies are applied fairly and consistently.
  • Ensures disciplinary procedures and documentation are completed according to Standard and Local Operating Procedures (SOPs and LSOPs) and supports the Peer Review Process.
  • Reviews staffing levels to ensure that guest service, operational needs, and financial objectives are met.
  • Utilizes all available on-the-job training resources for employees.
  • Solicits employee feedback, employs an "open door" policy, and reviews employee satisfaction results to identify and address employee concerns.

Additional Responsibilities

  • Provides information to supervisors, co-workers, and subordinates through various communication methods.
  • Analyzes information and evaluates results to determine the best solutions and resolve issues.
  • Attends and participates in all relevant meetings.
The salary range for this position is $102,000 to $139,000 annually.
