**Job Summary**

JC Resorts is seeking a highly skilled and experienced Sous Chef to join our team at Surf & Sand Resort in Laguna Beach, California. As a key member of our culinary team, the Sous Chef will be responsible for overseeing the daily operations of the kitchen, ensuring the highest quality of food and service, and maintaining a safe and efficient work environment.

**Key Responsibilities:**

  • Directly supervise kitchen staff to ensure optimal departmental efficiency, productivity, and quality standards.
  • Assist in the training, scheduling, support, review, and discipline of kitchen employees to maintain high levels of employee morale and department productivity.
  • Oversee the proper and efficient preparation of food for Splashes, banquets, and special functions, ensuring that quality and quantity standards are being met.
  • Inventory and supply storage areas as needed to accommodate business needs.
  • Follow all specified procedures to open or close the kitchen.
  • Oversee culinary operations of Splashes in the absence of the Executive Chef or Chef de Cuisine.
  • Maintain Pool & Beach kitchen, ensuring setup, quality, and appropriate staffing.
  • Properly document Personnel/Payroll transactions, as directed, for processing in the Personnel office.

**Requirements:**

  • English fluency required. Spanish fluency helpful.
  • Culinary graduate with knowledge of all facets of kitchen operations and production.
  • Minimum two years prior hotel/kitchen experience, including one year supervisory experience.
  • Familiar with OSHA, SB198, local Department of Health regulations, and relevant current laws governing handling of hazardous substances.
  • Valid California driver's license required. Proof of personal automobile insurance coverage required.
