POSITION SUMMARY: The Senior Kitchen Operations Manager is responsible for the daily management of kitchen activities, ensuring professionalism, respect, and efficiency. This role involves understanding the culinary vision of the head chef and adhering to all operational protocols. The position also includes mentoring and guiding junior kitchen staff while maintaining high standards of quality and cleanliness.

GENERAL EXPECTATIONS:

  • Comprehend all operational programs, procedures, and training protocols.

ESSENTIAL DUTIES & RESPONSIBILITIES:

  • Fully understand and implement all policies and procedures established by the Executive Chef.
  • Take complete responsibility for the quality and integrity of all culinary offerings.
  • Ensure proper receipt of products, adhering to restaurant receiving standards.
  • Collaborate with kitchen staff to ensure timely completion of mise-en-place in line with restaurant standards.
  • Oversee production tasks including butchering, charcuterie, braises, stocks, and marinades.
  • Organize and maintain cleanliness in the walk-in cooler and storage areas.
  • Assist in managing kitchen personnel, including prep and dishwashing staff.
  • Participate in menu and recipe development, documenting new recipes in standard formats.
  • Support team efforts across all kitchen stations to meet service standards.
  • Maintain a hygienic and safe work environment at all times.
  • Attend scheduled meetings and contribute ideas relevant to the agenda.
  • Ensure all kitchen equipment is maintained according to safety and preventive maintenance protocols.
  • Conduct end-of-month inventory as required.
  • Supervise lunch and dinner service while managing daily production needs.

SUPERVISORY RESPONSIBILITIES: This role supervises non-exempt kitchen positions regularly and assists in restaurant management, ensuring compliance with organizational policies and applicable laws.

REQUIRED QUALIFICATIONS: To succeed in this role, candidates must meet the following qualifications:

  • Ability to communicate effectively in the predominant language of the restaurant's operating area.
  • A minimum of 2 years of experience in kitchen preparation and cooking within a fine dining environment.
  • Strong communication and organizational skills, with the ability to interact professionally with various stakeholders.
  • Willingness to work a minimum of 50 hours per week.
  • Proficiency in Microsoft Office Suite: Word, Excel, PowerPoint.
  • Experience with accounting software, POS systems, and payroll/HRIS systems.
