Job Title: Executive Sous Chef

Job Summary:

ASM Global, a leading provider of public assembly facilities, is seeking an experienced Executive Sous Chef to join our team at the Long Beach Convention Center. As a key member of our culinary team, you will be responsible for overseeing the daily operations of the hot kitchen, including scheduling, menu planning, and inventory management.

Key Responsibilities:

  • Work closely with the Executive Chef to develop and implement menus, ensuring high-quality dishes that meet the expectations of our clients and guests.
  • Conduct on-site menu tastings and provide feedback to the culinary team.
  • Estimate food consumption and oversee the purchasing and supply of ingredients and equipment.
  • Ensure that all kitchen operations are conducted in a safe and sanitary manner, adhering to industry standards and regulations.
  • Supervise and coordinate the work of kitchen personnel, including cooking, prep, and dishwashing staff.
  • Develop and implement training programs for new hires, ensuring they are equipped to perform their duties effectively.
  • Establish and maintain relationships with suppliers and vendors to ensure timely and cost-effective delivery of goods and services.
  • Participate in budgeting and forecasting, ensuring that kitchen operations are conducted within established financial parameters.

Requirements:

  • One-year certificate from a culinary school or equivalent experience.
  • Four years of related experience in a high-volume kitchen environment.
  • Excellent organizational and planning skills, with the ability to multitask and prioritize tasks effectively.
  • Strong communication and interpersonal skills, with the ability to work effectively with a diverse team of staff and management.
  • Knowledge of food safety and sanitation procedures, with the ability to maintain a clean and safe kitchen environment.
  • Ability to work flexible hours, including nights, weekends, and holidays, as required.
