Job Overview

The Assistant Kitchen Manager plays a crucial role in delivering exceptional culinary experiences by providing effective leadership to kitchen personnel during food service operations. This position involves collaborating with the Executive Chef to oversee kitchen activities, streamline order processing to maintain high standards of taste and presentation, and assume additional responsibilities in the absence of the Executive Chef to ensure the kitchen team receives appropriate guidance.

KEY RESPONSIBILITIES

The Assistant Kitchen Manager is tasked with supervising food preparation and cooking processes. To excel in this role, candidates should be prepared to manage the following daily responsibilities:

  • Preparing meals that align with guest specifications in a timely manner.
  • Accurately measuring ingredients and food portions.
  • Ensuring compliance with established standards, procedures, departmental rules, and sanitation regulations among kitchen staff.
  • Utilizing kitchen tools and equipment, including grills, ovens, steamers, and warmers, for food preparation.
  • Overseeing kitchen inventory management to guarantee the freshness and quality of supplies.
  • Maintaining proper food temperatures during cooking and ensuring safe storage afterward.
  • Keeping workstations and kitchen equipment clean, organized, and sanitized.
  • Managing kitchen opening, closing, and other assigned duties as directed by the Executive Chef.

COMPLIANCE AND REGULATORY DUTIES:

In addition to the responsibilities outlined above, all team members are expected to adhere to compliance with laws and regulations:

  • Participate in mandatory training sessions provided by the company.
  • Obtain and maintain necessary licenses.
  • Perform duties in accordance with local laws and regulations.
  • Ensure minors are not permitted in restricted areas or allowed to consume alcohol or tobacco products.
  • Be knowledgeable about departmental ordinances, regulations, and policies.
  • Understand the property’s initiatives to address problem gaming.
  • Report any known misconduct or violations.

EDUCATION AND EXPERIENCE REQUIREMENTS:

  • Culinary degree or equivalent experience with a minimum of three (3) years in a culinary role.
  • Previous experience in a supervisory or managerial capacity within a high-volume hospitality environment is highly preferred.
  • Demonstrated exceptional culinary skills.
  • Ability to effectively lead and motivate kitchen staff while fairly distributing tasks.
  • Familiarity with industry best practices in hotel and catering services.
  • Knowledge of health and safety regulations.
  • Proficiency in Microsoft Office, Point of Sale, and restaurant management software.
  • Capacity to multitask and perform efficiently under pressure.
  • Strong verbal and written communication skills.
  • Attention to detail and excellent organizational abilities.

CERTIFICATIONS AND LICENSES:

Possession of a valid driver's license with a minimum of three (3) years of driving experience.

PHYSICAL REQUIREMENTS:
