We are seeking a highly skilled and experienced Executive Chef to join our team at Colonial Downs Group LLC. As a key member of our culinary team, you will be responsible for providing leadership and guidance to our kitchen staff, ensuring the highest quality of food and exceptional customer service.
Key Responsibilities- Leadership and Guidance: Provide supportive leadership to kitchen staff, assisting in the monitoring of kitchen activities and expediting orders to ensure quality taste and presentation.
- Food Preparation and Production: Direct, assist, train, and re-train cooks in the preparation of food and food orders, controlling production levels, proper recipe following, and sanitation.
- Inventory Management: Maintain inventory of station and order stock to maintain pars, controlling waste by monitoring proper rotation, storage, and quantity control.
- Training and Development: Assist in the training and coaching of Line Cooks, teaching proper knife skills, cooking techniques, cooking methods, and terminology.
- Regulatory Compliance: Ensure compliance with local laws and regulations, attending required training sessions, obtaining and retaining required licenses, and performing duties in accordance with Company policies and procedures.
- Experience: Two (2) years of experience in a Lead Cook role, with experience in grilling, broiling, sautéing, and steaming foods.
- Training and Development: Experience in training staff, with the ability to coordinate cooking times with co-workers and manage multiple orders simultaneously.
- Certifications and Licenses: Virginia Racing Commission License and a valid Driver's License with a minimum of three (3) years driving experience.
