Job Overview

The Senior Kitchen Supervisor plays a pivotal role in guiding kitchen personnel during food preparation and service. The Senior Kitchen Supervisor will lead, mentor, and retrain culinary staff in food preparation techniques, while also managing production levels, adhering to recipes, and maintaining sanitation standards.

KEY RESPONSIBILITIES

  • Prepare and/or assign food orders based on established standard recipes.
  • Organize orders for timely pick-up.
  • Maintain a clean and organized workstation and storage areas at all times.
  • Monitor waste and ensure proper food rotation, storage, and quantity control.
  • Keep track of inventory levels and place orders to maintain stock.
  • Consistently implement safety and sanitation protocols.
  • Assist in training and developing Line Cooks.
  • Prepare a variety of dishes in accordance with menu requirements and business demand.
  • Teach and demonstrate proper knife skills, cooking techniques, and culinary terminology.
  • Read, comprehend, and create standardized recipes for all food offerings.

COMPLIANCE AND REGULATORY DUTIES:

In addition to the responsibilities outlined above, every team member is expected to adhere to compliance with relevant laws and regulations.

  • Participate in mandatory training sessions provided by the organization.
  • Obtain and maintain necessary licenses.
  • Perform duties in accordance with local laws and regulations.
  • Ensure that minors are not permitted in restricted areas or allowed to engage in prohibited activities.
  • Stay informed about the ordinances, regulations, and policies relevant to the department.
  • Be aware of the organization's programs addressing problem gaming.
  • Report any misconduct or violations observed.

EDUCATIONAL AND PROFESSIONAL REQUIREMENTS:

  • Minimum of two (2) years of experience in a supervisory cooking role.
  • Proficient in grilling, broiling, sautéing, and steaming techniques.
  • Experience in staff training is preferred.
  • Able to efficiently manage multiple orders simultaneously, coordinating cooking times with team members.

CERTIFICATIONS:

Valid license from the Virginia Racing Commission.

Valid Driver's License with at least three (3) years of driving experience.
