Job Overview

POSITION SUMMARY:

The Culinary Operations Manager oversees the comprehensive functioning of the kitchen area within the establishment, encompassing all catering services, budget management, and cost control. This role involves procuring ingredients, maintaining production documentation, and ensuring that all staff are proficient in safe food handling and preparation practices. The Culinary Operations Manager guarantees that the organization’s standards are consistently met: food presentation is appealing, cooking is executed correctly, portions are accurate, and service is prompt. Furthermore, this position ensures that the kitchen adheres to all health and safety regulations.

KEY RESPONSIBILITIES:
  • Support the General Manager in fulfilling all production needs while adhering to recipes and safe food handling practices in a clean and professional environment.
  • Lead and develop the team to meet the performance expectations set by management.
  • Organize all cooking and preparation tasks according to the production timetable.
  • Exhibit expertise in recipe execution, measurement accuracy, and culinary techniques.
  • Conduct temperature assessments during food preparation to ensure compliance with safety standards. Maintain accurate logs for production, refrigeration, and temperature.
  • Adhere to and enforce sanitation protocols as outlined by the Food Service Director or Executive Chef.
  • Assist in the implementation and monitoring of the sanitation cleaning schedule for all kitchen spaces and equipment.
  • Accurately complete and submit weekly payroll.
  • Support production in the cold pantry station as needed.
  • Facilitate weekly kitchen meetings with all kitchen staff.
  • Act as the Person In Charge (PIC) for all catering events.
  • Coordinate and delegate all cooking, preparation, delivery, and setup tasks according to the catering agenda.

  • Possess specific vision abilities, including close vision and the ability to adjust focus. The employee must be capable of multitasking.
  • Be prepared for extended hours, including evenings and weekends, travel to various work locations, and occasional out-of-town travel. Must be able to drive to different sites.

Qualifications:

Education:
  • Culinary degree or equivalent preferred.
  • Food Management Professional (FMP) certification preferred.
  • Completion of required safety training courses.
Certifications:
  • ServSafe Certification is mandatory.
  • OSHA Certification is preferred but not required.
Computer Skills:
  • Proficiency in Microsoft Office Suite.
  • Aptitude for learning new software applications.
Other Qualifications:

A minimum of 3-5 years of experience in high-volume food service management is required.
