POSITION SUMMARY

Responsible for the overall effectiveness of daily kitchen functions. Demonstrates culinary expertise by actively engaging in tasks while guiding the team and overseeing all food-related activities. Aims to enhance guest and employee satisfaction while adhering to the operational budget. Manages all kitchen sectors to ensure a consistently high-quality output. Plays a crucial role in mentoring and developing team members, including direct reports. Must guarantee that sanitation and food safety standards are met.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years of experience in culinary, food and beverage, or a related professional field.
OR

  • 2-year degree from an accredited institution in Culinary Arts, Hotel and Restaurant Management, or a related discipline; 2 years of experience in culinary, food and beverage, or a related professional area.

Leading the Culinary Team

  • Utilizes interpersonal and communication skills to lead, influence, and motivate others; advocates for sound financial and business decision-making; demonstrates integrity and leads by example.
  • Supervises and manages kitchen staff, overseeing all daily operations. Understands employee roles sufficiently to perform duties in their absence.
  • Fosters mutual trust, respect, and collaboration among team members.
  • Acts as a role model to exemplify appropriate behaviors.
  • Ensures and maintains employee productivity levels.
  • Solicits team feedback, employs an open-door policy, and reviews employee satisfaction results to identify and address concerns.
  • Clarifies expectations and guidelines for employees.
  • Establishes and maintains collaborative relationships with team members.
  • Recognizes and celebrates team successes publicly.
  • Leads shifts while personally preparing food items and fulfilling requests based on required specifications.
  • Supervises and coordinates the activities of cooks and kitchen staff engaged in food preparation.

Ensuring Culinary Standards and Responsibilities are Met

  • Develops and creates new applications, ideas, relationships, systems, or products, including artistic contributions.
  • Oversees kitchen shift operations and ensures compliance with all Food & Beverage policies, standards, and procedures.
  • Recognizes superior quality in products, presentations, and flavors.
  • Ensures adherence to food handling and sanitation standards.
  • Follows proper handling and temperature guidelines for all food products.
  • Ensures staff maintain required food handling and sanitation certifications.
  • Assists the Executive Chef with all kitchen operations.
  • Maintains standards for purchasing, receiving, and food storage.
  • Prepares and cooks a variety of foods, either regularly or for special events.
  • Checks the quality of raw and cooked food products to ensure standards are met.
  • Assists in determining food presentation and creates decorative displays.

Ensuring Exceptional Customer Service

  • Provides services that exceed expectations for customer satisfaction and retention.
  • Manages daily operations, ensuring quality standards and customer expectations are consistently met.
  • Enhances service by communicating effectively and assisting individuals in understanding guest needs, providing guidance, feedback, and coaching as necessary.
  • Observes employee service behaviors and provides constructive feedback.
  • Aims to improve service performance continuously.
  • Emphasizes guest satisfaction in all departmental meetings and focuses on ongoing improvement.
  • Empowers staff to deliver excellent customer service.
  • Sets a positive example for guest relations.

Maintaining Culinary Goals

  • Aims to achieve and exceed performance, budget, and team goals.
  • Develops specific goals and plans to prioritize, organize, and accomplish work tasks.
  • Understands the impact of departmental operations on overall financial goals and objectives and manages to achieve or exceed budgeted targets.
  • Trains staff in safety procedures.

Managing and Conducting Human Resource Activities

  • Identifies the developmental needs of others and coaches or mentors them to enhance their skills.
  • Recognizes the educational needs of others, develops training programs, and instructs as necessary.
  • Manages payroll administration.
  • Brings issues to the attention of the department manager and Human Resources as needed.
  • Utilizes the Labor Management System to effectively schedule according to business demands and track employee time and attendance.
  • Reviews staffing levels to ensure guest service, operational needs, and financial objectives are met.
  • Participates in employee disciplinary procedures as needed.
  • Engages in the employee performance appraisal process, providing feedback as required.
  • Contributes to the development and implementation of corrective action plans.

Additional Responsibilities

  • Provides information to supervisors, co-workers, and subordinates through various communication methods.
  • Analyzes information and evaluates results to select the best solutions and resolve issues.
  • Attends and participates in all relevant meetings.
The salary range for this position is $72,000 to $95,000 annually.
