Position Overview

Job Summary: This pivotal role within Aztec Shops, Ltd. focuses on the assessment and dissemination of nutritional and dietary information for the campus community, including students, faculty, and staff. The position is integral to ensuring that menu offerings align with health standards while managing a substantial annual budget.

Key Responsibilities:

  • Nutritional Analysis: Develop and sustain a detailed database of ingredients used in menu items, providing clear nutritional labeling both in-person and online. This includes calorie counts, macronutrient breakdowns, and allergen information, enabling informed dietary choices.
  • Recipe Consistency: Work closely with culinary leaders to ensure that recipes are executed consistently, maintaining the integrity of nutritional information and product quality.
  • Menu Development: Collaborate with culinary teams to review and enhance menus, ensuring they meet nutritional guidelines and cater to diverse dietary needs.
  • Stakeholder Engagement: Foster relationships with various campus entities, including student organizations and health services, to promote nutrition education and support.
  • Food Safety Compliance: Partner with culinary staff to uphold food safety standards, particularly concerning allergens and dietary restrictions.
  • Training and Development: Ensure that culinary and operational teams receive ongoing training regarding allergens and food safety protocols.
  • Data Management: Create and maintain a program to track dietary needs among meal plan participants, focusing on specific allergies and intolerances.

Collaboration with Health Promotion:

  • Support for Dietary Needs: Provide tailored guidance for individuals with specific dietary restrictions or health conditions, ensuring comprehensive support and resources.
  • Nutrition Awareness Initiatives: Implement programs to educate the campus community on the significance of nutrition for overall well-being and academic success.
  • Educational Workshops: Design and facilitate workshops on various nutrition-related topics, promoting healthy eating habits.
  • Research Contributions: Engage in research related to nutrition and wellness, assessing the effectiveness of implemented programs.

Professional Development:

  • Stay informed on the latest trends and research in nutrition through continuous education and professional networking.
  • Ensure compliance with all relevant laws and regulations pertaining to health and safety.
  • Perform additional duties as required.

Qualifications:

A Bachelor's Degree in food and nutrition sciences or a related field is required, along with a minimum of three years of relevant experience. Certification in food safety and allergen management is necessary at the time of hire, along with an active Registered Dietitian Nutritionist (RDN) credential.

Skills Required:

  • Strong communication skills for effective interaction with diverse groups.
  • Proficient in basic mathematical concepts for nutritional calculations.
  • Ability to manage multiple tasks and prioritize effectively.
  • Competence in using office technology and software.

Work Environment:

This position is primarily office-based, with occasional travel to various locations for project oversight and inspections. The work environment may vary in noise levels and conditions.
