SUMMARY: This pivotal position within Aztec Shops focuses on the assessment and dissemination of nutritional and dietary information for the campus community, including students, faculty, and staff, as well as patrons at various venues. The role manages a substantial annual budget exceeding $50M, ensuring menu recommendations align with nutritional standards while adhering to all relevant regulations. Collaboration with the Well-being and Health Promotion department is essential for success.

KEY RESPONSIBILITIES:

Core duties include:
  • Nutritional Analysis: Establishing and maintaining a detailed database of ingredients in menu offerings, providing comprehensive nutrition labeling for students, faculty, and staff. This includes caloric content, macronutrient breakdowns, and allergen information, ensuring informed dietary choices.
  • Recipe Consistency: Working closely with culinary leaders to uphold recipe integrity and production standards, guaranteeing the accuracy of nutritional information.
  • Menu Development: Partnering with culinary teams to review and enhance menus, advocate for healthier options, and ensure compliance with nutritional guidelines.
  • Stakeholder Engagement: Fostering relationships with campus organizations and departments to integrate nutrition education into campus life.
  • Food Safety Compliance: Collaborating with culinary teams to uphold safety standards, particularly concerning allergens and dietary needs.
  • Staff Training: Ensuring that culinary and operational staff receive ongoing training on allergen management and food safety protocols.
  • Data Management: Developing a system to track meal plan participants with specific dietary restrictions, working in conjunction with relevant campus offices.
Additional Responsibilities:
  • Support for Diverse Populations: Offering tailored guidance for individuals with dietary restrictions or health conditions, collaborating with healthcare professionals as necessary.
  • Nutrition Awareness Initiatives: Implementing programs to promote the significance of nutrition in overall health and academic success.
  • Educational Outreach: Creating and leading workshops on various nutrition-related topics to enhance community knowledge.
  • Research Contributions: Participating in research initiatives related to campus nutrition and evaluating program effectiveness.

  • Regulatory Compliance: Ensuring adherence to all relevant laws and company policies.

MINIMUM QUALIFICATIONS:

A Bachelor's Degree in food and nutrition sciences or a related field is required, along with a minimum of three years of relevant experience in similar environments. Certifications in food safety and allergen management are mandatory upon hire. A valid Registered Dietitian Nutritionist (RDN) credential or equivalent is also required.

SKILLS REQUIRED:

Language Proficiency: Ability to read and interpret business information, communicate effectively, and present information clearly.

Mathematical Skills: Proficiency in basic math concepts for calculations related to nutrition and portioning.

Reasoning Ability: Strong analytical and organizational skills to manage multiple tasks efficiently.

Technical Skills: Competence in using office equipment and software.

Physical Requirements: Ability to perform tasks that may involve lifting, standing, and walking in various environments.

WORK ENVIRONMENT:

Work is typically conducted in an office setting with regular visits to dining venues. The noise level may vary from low to moderate, with potential exposure to outdoor conditions.
