POSITION OVERVIEW: This role within Aztec Shops focuses on the assessment and dissemination of nutritional and dietary information for the campus community, including students, faculty, and staff, while managing a substantial annual budget exceeding $50M. Responsibilities include menu optimization and ensuring recipe adherence while complying with all relevant regulations. Collaboration with the Well-being and Health Promotion department is essential.

KEY RESPONSIBILITIES:

Note: The following duties represent the general nature of the role and are not exhaustive. Successful performance of this position requires meeting the essential functions outlined below. Additional responsibilities may be assigned based on operational needs.

Core responsibilities involve effective collaboration with Executive Chefs, the Culinary Team, and Food & Beverage personnel:
  • Nutritional Data Management: Establishing and updating a detailed database of ingredients used in offerings and providing accurate nutritional labeling for both on-site and online platforms. This includes calorie counts, macronutrient breakdowns, and allergen information, enabling informed dietary choices for consumers.
  • Recipe Consistency: Working alongside Executive Chefs and culinary staff to ensure recipe fidelity and production accuracy, thereby guaranteeing the reliability of nutritional information.
  • Menu Evaluation: Partnering with culinary leaders to review and enhance menus, propose healthier alternatives, and ensure compliance with nutritional standards while promoting inclusive dietary options.
  • Stakeholder Engagement: Cultivating relationships with various campus entities, including student organizations and health services, to integrate nutrition education into campus life.
  • Food Safety Compliance: Collaborating with chefs and safety teams to uphold food safety standards, particularly concerning allergens and dietary restrictions.
  • Staff Training: Ensuring culinary and operational teams receive ongoing training regarding allergens and proper recipe execution, emphasizing food safety and nutritional integrity.
  • Data Analysis: Developing a program to track meal plan participants with specific dietary needs, working closely with relevant administrative offices to gather necessary data.
Collaboration with Well-being and Health Promotion includes:
  • Support for Dietary Needs: Offering tailored guidance for individuals with dietary restrictions or health conditions, collaborating with healthcare professionals to ensure comprehensive support.
  • Nutrition Awareness Initiatives: Leading campaigns to promote the significance of nutrition and its impact on health and academic success through events and workshops.
  • Educational Outreach: Creating and facilitating workshops on various nutrition-related topics, including balanced diets and hydration.
  • Research Contributions: Participating in research related to campus nutrition and evaluating the effectiveness of nutrition programs.
Additional Responsibilities:
  • Professional Growth: Keeping abreast of the latest trends and research in nutrition through continuous education and networking.
  • Regulatory Compliance: Ensuring adherence to all relevant laws and company policies.
  • Other duties as assigned.
QUALIFICATIONS:

EDUCATION AND EXPERIENCE:

A Bachelor's Degree in food and nutrition sciences or a related field is required, along with a minimum of three years of relevant experience in similar environments. Certification in ServSafe and Allergen management is mandatory at the time of hire or within two months of employment. An active Registered Dietitian Nutritionist (RDN) credential or equivalent is also required.

SKILLS AND ABILITIES:

LANGUAGE: Proficiency in reading, writing, and communicating effectively with diverse audiences.

MATH: Ability to perform basic mathematical calculations relevant to the role.

REASONING: Strong analytical and organizational skills, with the ability to prioritize tasks effectively.

TECHNICAL: Proficient in using computers and office equipment.

PHYSICAL DEMANDS: Ability to perform tasks that may require lifting, standing, and walking across various locations.

WORK ENVIRONMENT: The position is primarily office-based, with frequent travel to various work sites. The noise level may vary depending on the location.
