Position Summary:

The Assistant Manager of Beverage Operations is accountable for the efficient management of the beverage department, including inventory oversight, procurement, organization, and cleanliness of bars and storage areas. This role ensures that optimal par levels are established and maintained across all beverage outlets and storerooms. The position plays a critical role in executing service-related operations in alignment with established operational standards.


Key Responsibilities:

  • Adhere to all relevant Tribal, Federal, and gaming regulations, as well as Kickapoo Lucky Eagle policies.
  • Deliver exceptional guest service by attentively addressing guest and team member inquiries and concerns.
  • Guarantee that all beverage offerings meet established quality standards.
  • Maintain certification in Health Code Standards; educate and enforce compliance among Beverage team members to uphold Public Health and Safety standards.
  • Possess thorough knowledge of TABC laws and ensure compliance among all staff.
  • Provide appropriate service levels based on anticipated demand.
  • Collaborate with other F&B management to ensure effective staffing and coverage through strategic scheduling.
  • Complete daily financial reports and tools as required.
  • Coordinate with Finance and IT to ensure accurate revenue reporting.
  • Monitor team member cash discrepancies and enforce wage deductions as per policies.
  • Conduct overnight inventory assessments in all bars to ensure proper maintenance.
  • Implement and review beverage inventory and cost control systems.
  • Analyze beverage department financial statements and recommend actions for improvement.
  • Work with the F&B Director and management team to guide purchasing decisions for beverage products.
  • Address guest complaints promptly to ensure satisfaction and implement recovery strategies as needed.
  • Foster a clean, safe, and welcoming environment for both team members and guests.
  • Ensure safe operation of all beverage equipment and report any mechanical issues.
  • Generate and manage work orders as necessary.
  • Uphold high standards of sanitation and inventory organization.
  • Inspect all products during storage and rotation.
  • Ensure proper stock storage and organization.
  • Complete paperwork promptly, including invoices and inventory records.
  • Maintain a perpetual inventory system and assigned par levels.
  • Develop procedures to enhance accountability.
  • Assist with beverage transfers and special requests.
  • Keep work areas clean and adequately supplied.
  • Support Beverage Inventory Clerks in updating inventory data.
  • Collaborate with management on vendor negotiations and pricing.
  • Monitor temperature control at storage locations.
  • Inspect beverage deliveries and invoices for quality assurance.
  • Align departmental goals with casino objectives for positive outcomes.
  • Lead Beverage Department staff through coaching and training, documenting performance as necessary.
  • Set performance expectations and provide operational support to staff.
  • Conduct timely and effective evaluations for all Beverage staff.
  • Promote KLECH core values and exceptional guest service.
  • Safeguard confidential information related to the position.
  • Complete all required training sessions as assigned.
  • Ensure compliance with Federal currency transaction reporting and Anti-Money Laundering policies.
  • Perform additional duties as assigned.

Qualifications:

  • High School Diploma or GED required.
  • At least two years of operational experience in a restaurant, bar, or F&B department; experience in multiple venues is advantageous.
  • One year of supervisory experience in a high-volume environment.
  • Must obtain and maintain TABC certification.
  • Proficient in Microsoft Office applications.
  • Comprehensive knowledge of beverage operations.
  • Ability to make complex decisions and solve challenges effectively.
  • Strong analytical skills to interpret data and financial information.
  • Excellent communication skills in English; proficiency in Spanish or other languages is a plus.

Physical Requirements:

  • Regularly required to stand, sit, walk, and bend for extended periods.

  • Ability to lift and/or move up to 50 lbs. frequently.

Work Environment:

  • Typical office and casino floor settings.
  • Frequent walking and standing in a smoke-filled environment.
  • Temperature-controlled environment with varying noise levels.
  • Extended hours and irregular shifts may be necessary.
  • Must perform under pressure and manage stressful conditions.
  • Exposure to various lighting conditions may occur.
  • Travel may be required for essential functions.

Employment Conditions:

  • Must obtain and retain a KTTT Gaming Commission License and pass a background check.
  • Authorization to work in the United States is required.
  • Must be at least 18 years old.
  • Reliable transportation is necessary for commuting.
  • Compliance with internal policies and gaming regulations is mandatory.
