Reports to: Beverage Manager


Position Summary:

The Assistant Manager of Beverage Operations is accountable for the effective management of the beverage division, overseeing inventory management, procurement, and the cleanliness and organization of bar areas and storage facilities. This role ensures that optimal stock levels are established and maintained across all beverage outlets and storerooms while guaranteeing the seamless execution of service operations in line with established standards.


Key Responsibilities:

  • Adhere to all relevant Tribal, Federal, and local regulations, as well as internal policies and procedures.
  • Uphold exceptional guest service standards by attentively addressing concerns and inquiries from guests and team members.
  • Ensure that all beverage offerings comply with established quality standards.
  • Maintain certification in Health Code Standards; instruct and enforce compliance among Beverage team members to uphold Public Health and Safety obligations.
  • Possess comprehensive knowledge of TABC laws and ensure all staff members are certified accordingly.
  • Provide appropriate service levels based on anticipated demand.
  • Collaborate with other Food & Beverage management to ensure adequate staffing and management coverage through strategic scheduling.
  • Complete daily financial reports and tools as required.
  • Coordinate with Finance and IT departments to ensure accurate revenue reporting.
  • Monitor team member cash discrepancies and ensure compliance with wage deduction policies.
  • Conduct overnight inventory assessments to maintain bar standards.
  • Implement and review beverage inventory and cost control measures.
  • Analyze beverage department financial statements and provide actionable recommendations.
  • Work alongside the Director of F&B and management team to guide purchasing agents in product procurement, ensuring timely delivery of necessary items.
  • Address guest complaints promptly to achieve full satisfaction and implement appropriate recovery strategies.
  • Foster a clean, safe, and welcoming environment for both team members and guests, promoting a positive workplace culture.
  • Ensure safe operation of all beverage equipment and report any mechanical issues for repair.
  • Generate and manage work orders as needed.
  • Maintain high standards of cleanliness and inventory organization.
  • Conduct thorough inspections of stored products to ensure quality and proper rotation.
  • Organize stock storage effectively, focusing on systematic inventory management.
  • Complete necessary paperwork, including invoice submissions and inventory records, in a timely manner.
  • Document daily beverage supply transactions to maintain accurate records.
  • Implement a perpetual inventory system to uphold assigned stock levels.
  • Develop strategies to enhance accountability within the department.
  • Assist with beverage transfers, orders, and special requests as required.
  • Ensure workspaces are kept clean and adequately supplied.
  • Support Beverage Inventory Clerks in updating inventory cost information.
  • Collaborate with management on vendor negotiations and pricing strategies.
  • Oversee temperature control at storage locations.
  • Receive and verify beverage deliveries and invoices to ensure quality and accurate billing.
  • Align departmental goals with casino objectives to achieve positive outcomes.
  • Lead and mentor Beverage Department staff through effective training and coaching, documenting progress as necessary.
  • Set clear performance expectations and provide operational support to team members.
  • Conduct timely and constructive evaluations for all Beverage staff and Supervisors.
  • Promote core values and exemplary guest service practices.
  • Safeguard confidential information entrusted to the position.
  • Complete all mandatory training sessions as assigned.
  • Monitor compliance with currency transaction reporting requirements and Anti-Money Laundering policies.

Qualifications:

  • High School Diploma or GED required.
  • At least two years of operational experience in a restaurant, bar, or F&B department; experience in multiple venues is advantageous.
  • One year of supervisory experience in a high-volume environment.
  • Must obtain and maintain TABC certification.
  • Proficient in Microsoft Office applications.
  • Comprehensive understanding of beverage operations.
  • Demonstrated ability to navigate complex decision-making scenarios effectively.
  • Adept at analyzing and interpreting various data sources to meet objectives.
  • Strong verbal and written communication skills in English; proficiency in Spanish or other languages is a plus.

Physical Requirements:

Work Environment:

  • Typical office and casino floor settings.

  • Must obtain and maintain a KTTT Gaming Commission License, including passing a background check.

  • Must be at least 18 years old.
