Position Overview

Under the guidance of the Executive Chef and Executive Sous Chef, the Culinary Operations Manager will play a crucial role in supporting all culinary functions, overseeing production, operations, and sanitation standards within the culinary and stewarding departments throughout the venue.

Key Responsibilities

  1. Provide hands-on leadership focused on people and product for daily operations of assigned food outlet kitchens.
  2. Demonstrate extensive knowledge and experience in managing multiple outlets effectively.
  3. Ensure the selection and utilization of only the freshest ingredients, including fruits, vegetables, meats, and seafood, adhering to the highest standards in menu item preparation.
  4. Assist in monitoring the proper receiving, storage, and rotation of food products to comply with health regulations, including proper labeling and storage practices to maintain product freshness.
  5. Participate in the preparation of all necessary food items as directed by the Executive Chef or Executive Sous Chef.
  6. Lead culinary staff in maintaining sanitation standards across all kitchens to ensure compliance with local health department regulations and company policies.
  7. Foster positive customer and client relations through effective communication and sound financial practices to deliver efficient service and quality products.
  8. Collaborate with the Executive Chef and Executive Sous Chef in banquet operations.

Qualifications

To excel in this role, candidates must demonstrate the ability to perform each essential duty at the highest level. The following qualifications are essential:

  • A degree or certification from an accredited culinary arts institution, or apprenticeship certification from the American Culinary Federation.
  • A minimum of three (3) years of experience in a high-volume, full-service food operation.
  • A proven track record of enhancing kitchen efficiencies, quality, and cost management.
  • Exceptional leadership, financial analysis, team-building, and customer service skills.
  • Knowledge of kitchen sanitation practices and the operation and maintenance of kitchen equipment.
  • Detail-oriented and highly organized, with the ability to quickly learn new programs and procedures.
  • Proficiency in Microsoft Word, Excel, and PowerPoint.
  • Flexibility to work extended hours, including nights, weekends, and holidays, as business needs require.
  • Willingness to provide short-term support to other facilities in case of business emergencies.
  • Travel may be necessary.
