Empowered Hospitality is seeking a talented Chef de Cuisine for a prestigious hospitality operation.

Position Overview:

We are in search of a skilled and dedicated Chef de Cuisine. This role involves overseeing kitchen staff, ensuring high-quality food preparation, and managing the proper handling and storage of food items in line with established standards. The Chef de Cuisine will also be responsible for food procurement and menu innovation while keeping a close eye on food and labor expenses.

Key Responsibilities:

Cost Management

  • Track food expenses by maintaining accurate purchasing and sales records.
  • Oversee daily ordering of dry goods, produce, meat, and seafood.
  • Review waste logs at the end of each shift.
  • Adjust back-of-house staffing based on business needs.
  • Reconcile daily payroll for kitchen staff.

Menu Innovation

  • Lead the testing and tasting sessions for new menu offerings.
  • Standardize recipes for consistency.
  • Communicate menu changes and updates to management and remain informed about reservations.
  • Train staff on new menu items and operational procedures.

Team Development

  • Provide training and supervision for kitchen staff.

Kitchen Oversight

  • Ensure a safe and healthy kitchen environment by adhering to sanitation standards.
  • Comply with health regulations and manage facility-related issues.
  • Develop and implement procedures for Hazard Analysis Critical Control Points (HACCP) and maintain a weekly log.
  • Establish communication protocols for maintenance issues with the engineering team.

Qualifications:

  • Minimum of 5 years' experience as a Chef de Cuisine or Executive Chef in upscale dining establishments.
  • Bachelor's degree in Culinary Arts, Hospitality Management, or a related field preferred.
  • Valid Food Handlers and ServSafe certifications.
  • Proven leadership skills with the ability to motivate team members.
  • Strong project management and problem-solving abilities.
  • Capacity to perform under pressure while maintaining professionalism.
  • Able to thrive in a fast-paced, dynamic environment.
  • Willingness to work evenings, weekends, and holidays as required.
  • Physical ability to lift over 30 lbs and perform essential job functions for extended periods.
  • Proficient in Microsoft Office Suite and other relevant software.

Compensation:

  • Salary range: $100,000 - $130,000.
