POSITION SUMMARY:

The Pastry Kitchen Leader is responsible for guiding the pastry team in crafting exquisite desserts and baked goods that uphold the highest standards of quality and artistry. This role involves overseeing all aspects of pastry operations, innovating menu offerings, and ensuring adherence to food safety standards.

KEY RESPONSIBILITIES:

Collaborate with the Corporate Pastry Chef to design and implement pastry menu selections, including recipe creation, cost analysis, and presentation. Manage the pastry kitchen operations, focusing on menu development, food preparation, and artistic presentation. Curate a seasonal pastry menu that aligns with Zuma's culinary ethos, prioritizing fresh, premium ingredients and inventive flavor profiles. Supervise and mentor pastry personnel, fostering teamwork and ensuring compliance with culinary standards. Educate the team on allergen management, ensuring all staff are equipped to handle food allergies safely. Uphold stringent food safety and sanitation practices, including HACCP guidelines, to maintain impeccable cleanliness and hygiene in the kitchen. Assist in staff scheduling, manage labor costs, and optimize workforce levels to meet operational needs. Partner with the Executive Chef and management to orchestrate special events, themed dinners, and promotional offerings. Monitor food costs, inventory, and kitchen expenditures, implementing cost-control strategies to enhance profitability while maintaining quality. Conduct regular inspections of kitchen equipment and facilities to ensure safety and cleanliness standards are met. Mentor and develop kitchen staff, including establishing a clear promotion pathway. Cultivate a positive and inclusive kitchen environment that encourages collaboration and professional growth. Address guest inquiries and special requests with professionalism and attention to detail. Maintain effective communication with front-of-house staff and management to ensure seamless service and guest satisfaction. Stay abreast of industry trends and culinary innovations to inspire creativity within the kitchen. Ensure compliance with company policies, safety regulations, and legal requirements. Act with integrity to uphold the company’s reputation. Perform additional duties as required.

REQUIRED QUALIFICATIONS:

Minimum of 5 years of experience as a Head Pastry Chef or Executive Pastry Chef in a high-volume culinary environment. Culinary degree or equivalent certification specializing in pastry arts. Exceptional pastry-making skills, with a comprehensive understanding of various baking techniques. Valid Food Handler's Card is required for the New York location. Strong leadership abilities, capable of motivating and guiding kitchen staff towards culinary excellence. Excellent organizational skills, with the ability to manage multiple tasks efficiently. Strong communication skills, fostering effective collaboration with kitchen and front-of-house teams. Knowledge of food safety and sanitation practices, including HACCP principles. Ability to thrive in a fast-paced kitchen environment. Flexibility to work varied hours, including evenings, weekends, and holidays as needed.

PHYSICAL DEMANDS:

Ability to perform essential job functions safely and effectively, adhering to ADA and FMLA standards. Capability to lift and carry up to 50 lbs; ability to stand for extended periods and navigate through the kitchen. Ability to perform physical tasks such as bending, lifting, and reaching frequently in a dynamic environment.
