Empowered Hospitality is seeking a talented Chef de Cuisine for a prestigious hospitality operation.

Opportunity Overview:

We are in search of a skilled and dedicated Chef de Cuisine. This role involves overseeing kitchen staff, ensuring high-quality food preparation, and managing the proper handling and storage of food items in line with industry standards. The Chef de Cuisine will also be responsible for food procurement and menu creation while effectively managing food and labor expenses.

Key Responsibilities:

Cost Management

  • Track food costs by maintaining accurate purchasing and sales records.
  • Oversee daily ordering of dry goods, produce, meat, and seafood.
  • Review waste logs at the end of each shift.
  • Adjust back-of-house staffing based on business needs.
  • Reconcile daily payroll for kitchen staff.

Menu Innovation

  • Lead the scheduling and execution of tastings for new menu items.
  • Standardize recipes for consistency.
  • Communicate menu changes to management and monitor reservations.
  • Train staff on updated menu descriptions and kitchen procedures.

Team Development

  • Supervise and mentor kitchen staff.

Kitchen Oversight

  • Ensure a safe and healthy kitchen environment by adhering to sanitation standards.
  • Comply with health regulations and manage facility-related issues.
  • Implement procedures for Hazard Analysis Critical Control Points (HACCP) and maintain logs.
  • Coordinate maintenance communication with the engineering team.

Qualifications:

  • Minimum of 5 years' experience as a Chef de Cuisine or Executive Chef in upscale dining establishments.
  • Bachelor's degree in Culinary Management or a related field preferred.
  • Food safety certifications are required.
  • Proven leadership skills with the ability to inspire team members.
  • Strong project management and problem-solving abilities.
  • Ability to perform under pressure while maintaining professionalism.
  • Experience in a fast-paced culinary environment.
  • Willingness to work flexible hours, including evenings and weekends.
  • Physical capability to lift 30+ lbs and remain active throughout shifts.
  • Proficient in Microsoft Office Suite and payroll software.

Compensation:

  • Competitive salary range: $100,000 - $130,000.
