Position Summary:

The Head Pastry Chef is pivotal in guiding the pastry division to craft and present outstanding desserts and baked goods that exemplify the highest standards of quality. This role encompasses the management of all pastry-related activities, the innovation of menu selections, and the assurance of compliance with food safety standards.

Key Responsibilities:

  • Collaborate with the Corporate Pastry Chef to strategize and implement pastry menu offerings, including recipe innovation, cost analysis, and presentation standards.
  • Oversee the pastry kitchen's daily operations, including menu design, recipe formulation, food preparation, and artistic presentation.
  • Create and sustain a seasonal pastry menu that aligns with Zuma's culinary ethos, prioritizing fresh, premium ingredients and inventive flavor profiles.
  • Guide and develop pastry team members, including sous chefs and kitchen staff, to ensure culinary consistency and adherence to professional standards.
  • Educate the team on allergen management, ensuring comprehensive knowledge of safe food handling practices.
  • Maintain rigorous food safety and sanitation protocols, including adherence to HACCP guidelines, to uphold the highest cleanliness standards.
  • Assist in workforce scheduling, manage labor expenses, and optimize staffing to meet operational needs.
  • Work alongside the Executive Chef and management to conceptualize and execute special events and promotional menus.
  • Monitor food costs and inventory, implementing cost-control strategies to enhance profitability while maintaining quality.
  • Conduct regular assessments of kitchen equipment and facilities to ensure operational safety and cleanliness.
  • Mentor and cultivate the kitchen team, developing and implementing a structured growth plan.
  • Promote a collaborative and inclusive kitchen environment, fostering teamwork and professional growth.
  • Address guest inquiries and special dietary requests with professionalism and attention to detail.
  • Ensure effective communication with front-of-house staff and management for seamless operations and guest satisfaction.
  • Stay informed on industry trends and culinary innovations to inspire creativity within the kitchen.
  • Uphold company policies and legal regulations, ensuring ethical operations.
  • Perform additional duties as required.

Qualifications:

  • Minimum of 5 years of experience as a Head Pastry Chef or Executive Pastry Chef in a high-volume culinary environment.
  • Culinary degree or equivalent certification specializing in pastry arts.
  • Exceptional pastry skills with a comprehensive understanding of baking and dessert techniques.
  • Strong leadership abilities, capable of motivating and guiding kitchen personnel toward culinary excellence.
  • Excellent organizational skills with the capacity to manage multiple tasks effectively.
  • Strong interpersonal skills, facilitating collaboration with kitchen and front-of-house teams.
  • Knowledge of food safety practices and local health regulations.
  • Ability to thrive in a fast-paced kitchen environment.
  • Flexibility to work varied hours, including evenings and weekends.

Physical Requirements:

  • Ability to perform essential job functions in compliance with ADA and other standards.
  • Must be able to lift and carry up to 50 lbs and stand for extended periods.
  • Ability to navigate work areas, including bending, lifting, and reaching frequently.
