Job Summary:

The Food and Beverage (F&B) Organization at Vail Resorts is a dynamic and fast-paced environment that requires exceptional culinary leadership. As a Sous Chef, you will be responsible for the overall quality of food and service at a restaurant, ensuring that guests have an excellent dining experience on a daily basis.

Key Responsibilities:
  • Assist with menu execution, production, and delivery to ensure seamless service.
  • Ensure food safety and employee safety across all operations, adhering to HACCP guidelines and Serve Safe Culinary Guidelines.
  • Help with performance reviews and scheduling of staff to budgeted labor, resolving payroll exceptions and approvals.
  • Assist with ordering, receiving, stocking, and rotation of product, cost transfers, variance reports, and inventory control.
  • Conduct routine line checks and maintain food quality of all food served and produced.
  • Culinary team development and training, including hiring and retaining food service personnel.
  • Utilize in-depth knowledge of classical and contemporary culinary techniques to drive menu innovation and excellence.
Requirements:
  • Minimum 3 years in high-volume restaurant operation.
  • Minimum 3 years of direct management/supervisory experience.
  • Purchasing Systems, MS Office Suite, and POS experience.
  • Serve Safe Certification or equivalent State Issues Food Handler Card.
Preferred:
  • Bachelor Degree or equivalent.
  • Culinary Degree.
  • Advanced Culinary Skills.

The expected pay range is $55,000 - $60,000. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
