Ralph Brennan Restaurant Group is seeking an experienced Executive Sous Chef to join our culinary team. Our chefs source and purchase the best local and regional ingredients to prepare and serve menus rooted in the freshest Gulf Seafood.

About the Role:

As Executive Sous Chef, you will execute contemporary, seasonal seafood dishes with enthusiasm, precision, and detail. You will oversee all stations in the kitchen and will jump in when needed. You will mentor our culinary staff and actively participate in menu planning and dish creation. The Executive Sous Chef works closely with the Executive Chef to maintain the highest quality and standards in the daily operations of the restaurant.

About You:

  • You embody hospitality and are a leader in the kitchen and dining room.
  • You are passionate about seafood and committed to serving the freshest ingredients.
  • You have experience managing line cooks, prep cooks, warewashers, and all hourly team members.
  • You ensure that all pars are met in the kitchen and oversee the execution of the menus.
  • You are energetic, enthusiastic, and possess strong communication and organizational skills.
  • You maintain a safe and sanitary work environment for all employees.

Requirements:

  • 3-4 years of experience as a Sous Chef
  • Experience in menu development and controlling food costs
  • Proficiency in expediting high-volume service
  • Excellent fish butchery skills
  • Strong leadership skills and the ability to lead by example
