Job Title: Executive Sous Chef

Location: Peninsula Grill, Planters Inn, Charleston, SC

Position Summary:

The Executive Sous Chef at Peninsula Grill is responsible for supporting the Executive Chef in overseeing kitchen operations and ensuring the delivery of exceptional culinary experiences. This role involves managing kitchen staff, maintaining quality standards, and assisting in menu development to align with the restaurant's reputation for excellence.

Key Responsibilities:

Assist in Kitchen Operations: Collaborate with the Executive Chef to manage all aspects of kitchen operations, including food preparation, cooking, and presentation. Ensure that all dishes meet the restaurant's high standards of quality and consistency.
Menu Development: Contribute to the creation and revision of innovative and seasonal menu items. Work with the Executive Chef to incorporate local ingredients and culinary trends while maintaining the restaurant's signature style.
Team Leadership: Supervise and train kitchen staff, fostering a positive and productive work environment. Assist in scheduling, performance evaluations, and continuous training to ensure team efficiency and morale.
Inventory and Cost Control: Monitor inventory levels, order supplies, and manage food costs to maximize profitability. Implement strategies to minimize waste and optimize resource usage.
Quality Assurance: Enforce strict adherence to health and safety regulations, including proper food handling, sanitation, and storage practices. Conduct regular inspections to ensure compliance with local health codes.
Collaboration and Communication: Work closely with front-of-house staff to ensure seamless service and guest satisfaction. Communicate effectively with team members to facilitate smooth kitchen operations.
Problem Solving: Address and resolve any issues related to kitchen operations, including equipment malfunctions, staffing challenges, or guest concerns.
Innovation and Creativity: Stay informed about culinary trends and industry advancements to introduce new techniques and concepts to the kitchen team.
Qualifications: Culinary degree or equivalent professional experience.
Proven experience in a high-volume, fine-dining kitchen, with at least 2-3 years in a leadership role.
Strong understanding of various cooking methods, ingredients, equipment, and procedures.
Excellent leadership and management skills with the ability to inspire and mentor a diverse team.
Exceptional organizational and multitasking abilities.
Ability to maintain composure under pressure and resolve conflicts efficiently.
Strong communication skills and the ability to work collaboratively with a team.
Passion for culinary arts and commitment to delivering exceptional guest experiences.
Work Environment: The Executive Sous Chef will work in a fast-paced, high-pressure kitchen environment. The position requires standing for extended periods, lifting heavy objects, and working evenings, weekends, and holidays as needed. Benefits:401k after 90 days, fully vested, company match to 3%
