Responsibilities

The primary duty of the Culinary Operations Supervisor is to oversee and guide a team of 25-30 inmate workers assigned to various culinary roles, including cooks, bakers, and food service personnel. This role is essential in ensuring the effective training and development of inmate workers, enhancing their skills in food production, presentation, and sanitation practices.

The supervisor will manage the receipt, storage, and distribution of all food and non-food supplies, ensuring compliance with safety and quality standards. Security responsibilities include maintaining control over kitchen tools and conducting regular inspections to prevent contraband.

As part of the correctional institution staff, the incumbent is also responsible for upholding the security protocols of the facility, prioritizing safety above all other tasks.

U.S. Citizenship is required.

Eligibility for the Career Transition Assistance Plan (CTAP) may provide selection priority for eligible surplus and displaced employees within the Department of Justice.

Qualifications

To qualify for this position, applicants must demonstrate adequate training and experience relevant to the culinary field. Candidates must meet the minimum acceptable standards for supervisory abilities and aptitude for working with inmates, providing detailed information in their application to support their qualifications.

Successful candidates will independently prepare a variety of food items, including meats, vegetables, and sauces, adhering to standardized recipes while accommodating special dietary needs.

Skills and Knowledge

Applicants should possess comprehensive knowledge of food preparation techniques and the ability to manage large-scale cooking operations. Familiarity with dietary restrictions and food safety protocols is essential.

Selective Factor

Applicants must hold a valid Food Protection Manager Certification from an ANSI-accredited provider. Proof of certification must be submitted with the application.

Additional Information

This position is included in the bargaining unit and requires successful completion of a background investigation and other assessments as part of the hiring process.
