POSITION OVERVIEW:

The Culinary Supervisor is responsible for the seamless operation of the kitchen, ensuring professionalism, respect, and efficiency at all times. This role requires a deep understanding of the chef's vision and adherence to all operational policies. The supervisor will mentor and guide junior kitchen staff while maintaining the highest standards of quality and cleanliness.

KEY EXPECTATIONS:

  • Demonstrate integrity and knowledge that align with the values of the Mina Group.
  • Ensure guests receive exceptional service and feel welcomed at all times.
  • Maintain organized and clean workstations that reflect the restaurant's philosophy and standards.
  • Identify opportunities for improvement and propose constructive solutions.
  • Exhibit professionalism, teamwork, and initiative in daily operations.

RESPONSIBILITIES:

  • Fully understand and implement all policies and procedures established by the Executive Chef.
  • Take complete responsibility for the quality and integrity of all food products served.
  • Ensure proper receiving and storage of all kitchen supplies.
  • Collaborate with team members to complete mise-en-place in a timely manner.
  • Engage in production tasks including butchering, charcuterie, and stock preparation.
  • Oversee the cleanliness and organization of the kitchen and storage areas.
  • Assist in managing kitchen staff, including prep and dishwashing teams.
  • Contribute to menu and recipe development.
  • Document new recipes in the standard corporate format.
  • Support all kitchen stations to ensure operational success.
  • Maintain a safe and hygienic working environment.
  • Participate in scheduled meetings and contribute ideas related to kitchen operations.
  • Ensure equipment is maintained according to safety and preventive maintenance protocols.
  • Conduct end-of-month inventory as required.

PHYSICAL REQUIREMENTS:

This position requires the ability to work in various temperature conditions, including extreme heat and cold. Candidates must be able to stand for extended periods, lift up to 30 pounds regularly, and perform tasks that require manual dexterity and coordination.

QUALIFICATIONS:

  • Strong communication skills in the predominant language of the restaurant's operating area.
  • A minimum of 2 years of experience in a high-end culinary environment.
  • Positive attitude and professional demeanor that reflects the restaurant's philosophy.
  • Ability to work efficiently in a fast-paced environment and manage multiple tasks.
  • Willingness to work flexible hours, including evenings and weekends.
