POSITION SUMMARY

Bub and Grandma's is seeking a Culinary Supervisor for our establishment. We are looking for individuals with substantial kitchen experience, preferably with a background in managing sizable teams. The ideal candidate should possess excellent communication skills, both face-to-face and digitally, and demonstrate strong organizational abilities. Empathy, kindness, and a passion for bread, pastry, sandwiches, beer, wine, and coffee are essential.

This role is set in a bustling environment, and candidates must thrive in high-pressure situations, managing a large team and a significant volume of orders, including dine-in, takeout, delivery, and catering services.

The successful applicant will collaborate closely with fellow managers, leads, and team members. This position involves working alongside another sous chef and various leads to establish efficient systems for nightly ordering, scheduling, inventory management, and culinary innovation. Additionally, the Sous team will oversee the Porter team, addressing scheduling, dish room challenges, and recruitment.

This role reports directly to the Culinary Director, aiming to refine the culinary vision and support the back-of-house staff and operations.

KEY RESPONSIBILITIES

  • Collaborate with the other sous chef to lead culinary operations, including recipe management, dish development, process optimization, and inventory monitoring.
  • Ensure consistency in product quality and output.
  • Supervise and execute tasks assigned to back-of-house leads, including ordering and inventory management.
  • Analyze sales and cost metrics, participating in managerial and financial discussions to enhance production efficiency.
  • Coordinate maintenance and servicing of kitchen equipment.
  • Foster a positive workplace through coaching, support, and motivation, while also addressing disciplinary matters when necessary.
  • Enhance operational efficiencies and the organization of kitchen and prep areas.
  • Perform additional related duties as required, in line with the responsibilities of the Culinary Supervisor.
  • Develop regular and seasonal menu specials.

QUALIFICATIONS

  • Minimum of 1 year of experience managing a team of at least 5 individuals.
  • Availability to work weekends.
  • Proactive problem-solving skills.
  • Strong verbal and written communication abilities.
  • Proficiency in Google Sheets/Excel, Adobe Suite, Toast Events/Catering, and 7Shifts is preferred.
  • Extensive knowledge of food, beverages, and the local restaurant scene, with a desire to expand this knowledge.
  • Compassionate and effective communicator and leader.
