Position Title: Culinary Operations Supervisor

Department: Back of House

Reports To: General Manager

Employment Type: Full Time

Compensation: $22.50 / Hour - Based on Experience

Primary Responsibilities:

Lead and manage all aspects of kitchen operations during opening shifts, ensuring adherence to recipe standards and effective staff management. Guarantee that all food items meet the highest quality and freshness standards.

Key Responsibilities:

Operational Management:

  • Supervise and guide opening kitchen staff to ensure compliance with all operational protocols.
  • Establish inventory levels to enhance freshness and efficiency in food preparation.
  • Collaborate with the General Manager to address scheduling requirements for opening shifts.
  • Possess comprehensive knowledge of menu items, ingredients, and preparation methods.
  • Utilize both manual and electronic equipment for food preparation and processing.
  • Ensure proper storage and labeling of food items in accordance with health regulations.
  • Read and execute recipes accurately.
  • Coordinate catering requests with relevant supervisors.
  • Maintain adequate stock of restaurant supplies.
  • Monitor food quality and consistency.
  • Oversee and manage orders for restaurant supplies, including produce and proteins.
  • Be responsible for opening the restaurant and act as a keyholder.
  • Perform various restaurant duties as needed, including food ticket management and working in different kitchen stations.
  • Inspect dishwashing areas to ensure compliance with cleaning procedures.

Safety and Compliance:

  • Assign and oversee food preparation tasks based on production schedules.
  • Ensure compliance with safety protocols among staff members.
  • Conduct food safety checks, including temperature monitoring.
  • Maintain a clean and sanitary kitchen environment.
  • Foster a positive and friendly workplace culture.
  • Regularly clean and sanitize work areas.

Staff Management:

  • Provide regular updates to the General Manager regarding kitchen operations.
  • Participate in weekly meetings with supervisors to address any operational issues.
  • Inspire, train, and develop kitchen staff in their respective roles.
  • Conduct recruitment and interviews for kitchen positions.
  • Manage staff breaks effectively.
  • Address and report any HR-related matters as necessary.

Administrative Duties:

  • Complete required administrative tasks and maintain operational checklists.
  • Report any equipment malfunctions to the General Manager.
  • Communicate with upper management regarding various initiatives.
  • Propose improvements for overall restaurant operations.
  • Participate in training events and other relevant activities.
  • Perform additional duties as assigned.

Qualifications:

  • High School Diploma required.
  • Minimum of 2 years experience in a high-volume quick service restaurant.
  • Preferred 1+ years of experience in kitchen operations and food preparation.
  • Demonstrated leadership experience.
  • Basic English communication skills required; Spanish preferred.
  • Proficient in food planning, preparation, purchasing, sanitation, and safety protocols.
  • CA ServSafe Food Safety Manager Certification required.
  • Ability to meet deadlines consistently.
  • Passionate about culinary arts and hospitality.
  • Basic computer skills necessary.
  • Strong math skills.
  • Effective communication skills.
  • Ability to work collaboratively and set a positive example for staff.
  • Friendly, energetic, and cooperative demeanor.
  • Ability to thrive in a fast-paced environment.
  • Legally authorized to work in the U.S.

Physical Requirements:

Must be able to perform tasks that involve standing, walking, reaching, bending, and lifting up to 25 lbs. for extended periods.

Work Conditions:

Availability to work 40+ hours per week, including early mornings, late evenings, weekends, and holidays. Exposure to various kitchen conditions, including cleaning chemicals and hot equipment.
