Key Responsibilities
  • Ensures product excellence in the designated area by consistently monitoring tasting panels and reviewing mise en place during preparation periods.
  • Oversees food production in the assigned section and provides clear instructions to the team to uphold food production standards while minimizing waste.
  • Supervises product delivery, guaranteeing quality and consistency, sufficient production quantities, correct execution methods, and presentation standards.
  • Effectively manages assigned Galley Staff during operational activities, ensuring adherence to production and storage requirements, including temperature and blast-chiller log documentation.
  • Participates in daily meetings with Galley management and organizes staff briefings to communicate information on menus, upcoming productions, and events, in line with Company Standards.
  • Monitors food consumption in the assigned production areas through portion control and production oversight, ensuring batch cooking/preparation processes are practiced to meet cost targets.
  • Adopts a strategic mindset, focusing on broad, forward-thinking approaches and financial outcomes.
  • Continuously trains staff in proper production methods, culinary techniques, menu and recipe knowledge, product holding techniques, and presentation and delivery of the product.
  • Ensures appropriate training and orientation is provided to new or first-time Galley staff.
  • Maintains up-to-date knowledge of public health standards and ensures ongoing compliance with all hotel-related public health policies.
Skills, Knowledge & Expertise
  • A minimum of five years of experience, including at least two years as a Demi Chef de Partie in a high-volume culinary environment from international hotels/resorts or the cruise industry.
  • Experience on cruise ships is highly preferred.
  • Extensive knowledge of international cuisines (Western/Continental Cuisine is essential) and a solid understanding of USPH/HACCP requirements and Food Management.
  • Formal qualification in Culinary Arts or equivalent from a recognized culinary training institution.
  • Ability to work effectively and supervise a multicultural team.
  • Proficient in MS Office and relevant job-related software.
  • Strong communication skills in English, both verbal and written.
