Key Responsibilities
- Effectively leads the Galley team during operational tasks as directed by the Executive Chef.
- Oversees food product delivery in the Buffet Area, Bell Box, and Alternative Dining venues, ensuring consistency by enforcing adherence to Company recipes, sufficient production quantities, and proper execution methods.
- Regularly makes professional and visible appearances in all Lido Deck and Alternative Dining food venues as directed by the Executive Chef.
- Ensures menu options are available for guests with special dietary needs and advises guests when possible.
- Actively participates in daily meetings with Galley management to review the previous day's operations and efficiency, as well as upcoming production and events.
- Manages operating hours, in collaboration with the Lido Manager, to ensure timely opening of Lido Deck food outlets.
- Collaborates with supervisors in other Galley sections to ensure a steady and cost-effective supply of food products in the Horizon Court.
- Controls food consumption through portion and production management and ensures adherence to Company recipes.
- Assists in maintaining compliance with all budgeted stock level targets to manage cost control.
- Supports the Executive Chef in providing appropriate training and orientation to all Galley staff, particularly those assigned to the Buffet Area.
- Degree in Culinary Arts from a recognized culinary institution or a three-year apprenticeship in lieu thereof.
- Minimum of five years of experience in large volume hotel or culinary operations, preferably with cruise ship experience, including at least two years as Executive Sous Chef or Chef De Cuisine.
- Extensive knowledge of international cuisines and proven cooking techniques.
- Ability to lead and train team members while providing clear direction under pressure.
- Fluent English language skills, both verbal and written.
- Proficient in MS Office and job-related software.
- Understanding of guest service fundamentals; ability and willingness to deliver exceptional service to our guests.
- Motivated to excel in all aspects of job responsibilities.
- Personable communicator with excellent social skills and a warm, friendly demeanor.
- Ability to continuously surprise and delight guests throughout their cruise experience.
- Commitment to establishing and maintaining courteous and professional working relationships in a diverse cultural environment.
