About the Role

Innisfree Hotels is a leading hospitality company that values its employees and fosters a culture of care. We are seeking a highly skilled and experienced Sous Chef to join our team.

Key Responsibilities

  • Ensure that all meals prepared in the kitchen meet high standards of quality, consistency, and presentation.
  • Provide training and guidance to kitchen staff to ensure they are equipped to deliver exceptional service.
  • Meet corporate quality standards and assist in establishing and enforcing food specifications, portion control, recipes, and sanitation.
  • Control food and labor costs while maximizing guest satisfaction.
  • Oversee all aspects of the daily operation of the kitchen and food production areas.
  • Monitor daily food cost and Loss Prevention in kitchen areas.
  • Work with the Director of Food and Beverage to create and implement menus.
  • Assess food portion size, visual appeal, taste, and temperature of items served.
  • Check all stations at the end of every shift for proper food storage and sanitation.
  • Check food purchases for proper ordering, quality, and price structure.
  • Oversee daily activities such as food items, sanitation, daily inventories, and food cost report.
  • Instruct culinary staff on daily forecasts and customer counts.
  • Proficiency in various cooking techniques, including charbroiling, frying, saut, braising, roasting, etc.
  • Recognize quality standards in fresh vegetables, fish, dairy, and meat products.
  • Follow recipes, including measuring and mixing ingredients to ensure final products are fresh.
  • Maintain a clean, healthy, and safe working area, with awareness of all sanitary practices.
  • Handle guest complaints and resolve problems to the best of their ability.

Requirements

  • High school diploma or equivalent.
  • Minimum 3 years of culinary experience, with a preference for hospitality industry experience.
  • Ability to interpret a variety of instructions provided in written, oral, or scheduled form.
  • Ability to read, write, and speak effectively in English to communicate with guests and team members.
  • Knowledge of reservation and POS systems.
  • Ability to work with computers and good knowledge of operating software.
  • Must be able to multi-task and be detail-oriented.
  • Must be a team player.
