Job Overview:

As an Assistant Kitchen Manager at Tender Greens, you will play a crucial role in supporting the overall management of daily culinary operations. It is essential that you are either fully certified or in the process of obtaining certification in all Front of House and Back of House roles, demonstrating a long-term commitment to professional growth within our organization.

Key Responsibilities:

  • Lead your team by exemplifying outstanding customer service and fostering a positive and motivating atmosphere.
  • Ensure compliance with established policies and procedures among team members and management.
  • Assist in the recruitment, onboarding, and training processes, including managing paperwork and uniform distribution.
  • Utilize the TG Training Certification Process to train new team members effectively.
  • Oversee the completion and uploading of Training Checklists and ensure all Learning Platform trainings are finalized.
  • Promote safe work practices to maintain a secure environment for both guests and team members.
  • Participate in performance evaluations and assist in progressive discipline as necessary.
  • Support management in shift operations, demonstrating the ability to run the restaurant independently.
  • Collaborate with the Executive Chef in planning and directing food preparation, coordinating production schedules, and ensuring the highest standards of food quality and presentation.
  • Demonstrate proper food preparation techniques to Prep Cooks and Line Cooks.
  • Supervise restaurant opening and closing procedures.
  • Assist with daily catering orders and create daily prep lists.
  • Contribute to the development of daily specials in accordance with standards.
  • Manage daily time edits and place orders for fish and produce.
  • Assist with periodic inventory, sanitation, food cost management, and food execution.
  • Conduct line checks and oversee kitchen checklists.
  • Manage open repair items in the R&M Platform.
  • Support daily administrative tasks and special projects as needed.

Qualifications:

  • Bachelor's or Associate's Degree in Hospitality, Restaurant Management, Culinary Arts, or equivalent experience in a high-volume restaurant setting.
  • Proven leadership abilities, including coaching, directing, and motivating a team.
  • Strong foundational knowledge of culinary techniques and their practical application.
  • Ability to thrive in a fast-paced, high-pressure environment.
  • Customer service-oriented with a focus on solutions.
  • Flexibility to work a schedule that meets restaurant needs.
  • Commitment to ongoing culinary development in both technique and perspective.
  • Proficient in MS Office, Google Docs, and Aloha Point of Sale systems.
  • Familiarity with CTUIT, UltiPro, and PeopleMatter is advantageous.
  • Excellent written and verbal communication skills, with a positive and engaging demeanor.
  • Current Food Safety Manager certification is required.

Physical and Environmental Requirements:

  • Ability to lift items weighing up to 50 lbs. regularly.
  • Repetitive forward bending of the head and neck.
  • Some bending, kneeling, stooping, twisting, and reaching may be required.
  • Must be able to stand or walk for extended periods.
  • Ability to work in a hot kitchen environment.
  • Effective communication skills to interact with team members, vendors, and guests.
  • Good vision and sensation to prevent burns in kitchen areas.
