Job Overview

SUMMARY:

Oversee the distribution of tasks among kitchen personnel. Support the Executive Sous Chef in various responsibilities. Ensure timely preparation and presentation of all food orders for service staff to guarantee prompt and efficient dining experiences. Prepare and season a variety of dishes including soups, sauces, meats, vegetables, and desserts, adhering to established recipes. Serve food in visually appealing dishes to enhance customer satisfaction. Maintain appropriate staffing levels, manage supplies, and uphold food safety standards during preparation and storage.

KEY RESPONSIBILITIES:

  • Assign tasks across all kitchen stations and roles.
  • Educate staff on culinary techniques, recipe adherence, quality assurance, and portion management.
  • Ensure that food items are served according to established specifications.
  • Capable of working across all kitchen stations.
  • Ensure compliance with health and safety regulations by all staff members.
  • Adhere to labor regulations regarding breaks and meal periods.
  • Guide and assess employee skill development, providing feedback on performance and documenting any policy violations.
  • Prepare raw ingredients and finished food items.
  • Monitor kitchen operations during peak hours to ensure efficiency.
  • Garnish dishes and coordinate order assembly for swift service.
  • Maintain cleanliness and sanitation of work areas, training staff on proper hygiene practices.
  • Assist the Executive Chef in creating and standardizing new recipes.
  • Support the procurement of food and kitchen supplies.
  • Verify receipt of food supplies and ensure proper inventory management.
  • Utilize point of sale systems for transaction processing and financial reconciliation.
  • Conduct end-of-shift reconciliations to ensure accurate financial reporting.
  • Participate in regular inventory assessments.
  • Maintain temperature logs and take corrective actions to ensure food safety.
  • Report equipment maintenance needs to the appropriate personnel.
  • Perform general cleaning duties using approved cleaning agents to comply with health standards.
  • Attend scheduled training, safety, and departmental meetings.
  • Assist the Executive Chef with daily operational tasks.
  • Carry out additional duties as assigned.

MINIMUM REQUIREMENTS:

  • Five years of experience in large-scale food preparation, including grilling, sautéing, and frying.
  • Two years of supervisory experience in a culinary environment.
  • Proficient in using computers for food order management.
  • Ability to read and apply standardized recipes.
  • Skilled in knife handling.
  • Knowledge of chemical safety protocols.
  • Ability to comprehend written English for safety and caution notices.
  • Strong mathematical skills for inventory and cost management.
  • Thorough understanding of kitchen equipment and its proper usage.

EDUCATION:

High School Diploma or equivalent required.

LICENSE REQUIREMENTS:

Must be able to obtain and maintain a gaming commission license.

PHYSICAL AND MENTAL DEMANDS:

  • Ability to lift up to 50 pounds.
  • Capability to stand for extended periods.
  • Frequent walking and standing required.
  • Constant auditory, visual, and verbal communication.
  • Regular balancing, bending, reaching, twisting, and stooping.

WORK ENVIRONMENT:

  • Work is conducted indoors in a controlled climate.
  • Collaboration in close quarters with team members.
  • Exposure to high noise levels and cooking fumes.
