Culinary Operations Supervisor

Overview:
The primary support to the Chef overseeing a Culinary outlet or specific discipline, stepping in when the Executive Sous Chef is unavailable, and possessing comprehensive training in all facets of the daily Food and Beverage operations, capable of managing the entire kitchen environment.
Key Responsibilities:
The Sous Chef is accountable for all elements of daily food preparation in designated areas of the establishment where meals are served, supporting the Chef and adhering to established guidelines in all Food & Beverage sectors. They lead kitchen personnel and address all food-related matters on behalf of the Executive Chef for their assigned areas.
Specific Duties Include:
- Assist the Chef in crafting and promoting all Food, Beverage, and Service aspects of the Department, fostering a culture of continuous learning and training with a focus on high-quality, fresh ingredients and seasonal techniques tailored for each outlet or event, balancing quality with profitability.
- Participate in the recruitment process, onboarding, and daily management of all culinary staff.
- Maintain knowledge of current local health regulations, Corporate HACCP, Food Safety SOPs, and Federal Guidelines, ensuring ongoing compliance within the operation.
- Organize, supervise, and manage all food preparation activities during daily operations.
- Contribute to the creation of assigned menus, recipes, and usage records.
- Assist in organizing and executing the implementation of assigned menu timelines and tasks.
- Ensure the kitchen brigade and station assignments operate successfully, adhering to established SOPs and directives.
- Support the Chef, Sales Department, Executive Management, and front-of-house staff in Food and Beverage marketing and sales initiatives.
- Execute all necessary accounting procedures, including F&B checkbook management, invoice processing, payroll, monthly inventory, and P&L reviews as assigned.
- Verify the freshness of ingredients and ensure adherence to recipes and portion control records.
- Monitor food-related expenses to achieve budgetary targets.
- Review guest feedback scores and strategize for positive improvements.
- Encourage a collaborative and respectful atmosphere among team members.

Required Skills:

Education and Experience:
- Associate's Degree in Culinary Arts or Business Administration.
