Position Overview:

The Head Pastry Chef is responsible for leading the pastry brigade in crafting exquisite desserts and baked creations that adhere to the highest standards of quality and artistry. This role encompasses the management of all pastry-related operations, the development of creative menu items, and the enforcement of food safety protocols.

Key Responsibilities:

  • Collaborate with the Corporate Pastry Chef to design and implement pastry menu offerings, including recipe formulation, cost analysis, and presentation techniques.
  • Oversee the daily operations of the pastry kitchen, ensuring efficient menu planning, recipe creation, and food presentation.
  • Curate and maintain a seasonal pastry menu that embodies Zuma's culinary philosophy, focusing on fresh, premium ingredients and innovative flavor profiles.
  • Supervise and mentor pastry team members, fostering a culture of consistency, teamwork, and adherence to culinary excellence.
  • Educate staff on allergen awareness and management, ensuring comprehensive knowledge of safe food handling practices.
  • Uphold stringent food safety and sanitation standards, including HACCP guidelines, to ensure a pristine kitchen environment.
  • Assist in the scheduling of kitchen personnel, managing labor costs, and optimizing staffing to meet operational needs.
  • Work in conjunction with the Executive Chef and management to plan and execute special events, themed dinners, and promotional offerings.
  • Monitor food costs, inventory, and kitchen expenditures, implementing cost-control strategies to enhance profitability while maintaining quality.
  • Conduct regular inspections of kitchen equipment and facilities to ensure safety, functionality, and cleanliness.
  • Mentor and develop kitchen staff, including establishing a clear promotion pathway.
  • Promote a positive and inclusive workplace culture, encouraging teamwork and professional growth among kitchen personnel.
  • Address guest inquiries, special requests, and dietary needs with professionalism and attention to detail.
  • Maintain effective communication with front-of-house staff and management to ensure seamless operations and guest satisfaction.
  • Stay informed on industry trends, culinary techniques, and new ingredients to inspire creativity within the kitchen.
  • Ensure compliance with company policies, safety regulations, and legal requirements.
  • Act with integrity to uphold the company's reputation.
  • Perform additional duties as required.

Qualifications:

  • Minimum of 5 years of experience as a Head Pastry Chef or Executive Pastry Chef in a high-volume culinary environment.
  • Culinary degree or equivalent certification with a focus on pastry arts.
  • Demonstrated expertise in pastry techniques and a comprehensive understanding of baking and dessert preparation.
  • Valid Food Handler's Card as required by local health regulations.
  • Strong leadership and management capabilities, with a talent for motivating kitchen staff towards culinary excellence.
  • Exceptional organizational and time management skills, with the ability to prioritize and manage multiple tasks effectively.
  • Excellent communication and interpersonal skills, fostering collaboration with kitchen staff and management.
  • Thorough understanding of food safety and sanitation practices, including HACCP principles.
  • Ability to thrive in a fast-paced kitchen environment under pressure.
  • Flexibility to work varied hours, including evenings, weekends, and holidays as needed.

Physical Requirements:

  • Ability to perform essential job functions in accordance with ADA, FMLA, and other applicable standards.
  • Capability to lift and carry up to 50 lbs; ability to stand for extended periods and navigate through work areas.
  • Physical agility to bend, lift, carry, and reach above shoulder height frequently in a dynamic environment.
