POSITION SUMMARY:

The Lead Pastry Artisan is responsible for guiding the pastry team in crafting and presenting outstanding desserts and baked goods that adhere to the highest standards of quality. This role involves overseeing all aspects of pastry operations, innovating menu selections, and ensuring compliance with food safety regulations.

KEY RESPONSIBILITIES:

Collaborate with the Corporate Pastry Chef to design and implement pastry menu offerings, including recipe creation, cost analysis, and presentation. Manage the pastry kitchen operations, focusing on menu development, food preparation, and artistic presentation. Create and maintain a seasonal pastry menu that aligns with Zuma's culinary philosophy, highlighting fresh, premium ingredients and inventive flavor profiles. Supervise and mentor pastry team members, fostering consistency, teamwork, and adherence to culinary excellence. Educate staff on allergen awareness and management, ensuring safe handling of food allergies. Uphold strict food safety and sanitation standards, including HACCP guidelines, to ensure a clean and hygienic kitchen environment. Assist in staff scheduling, manage labor costs, and optimize staffing to meet operational needs. Work closely with the Executive Chef and management to plan and execute special events and promotional menus. Monitor food costs, inventory, and kitchen expenses, implementing cost-control strategies to maximize profitability while maintaining quality. Conduct regular inspections of kitchen equipment and facilities to ensure safety and cleanliness. Mentor and develop kitchen staff, including creating and executing a professional development plan. Promote a positive and inclusive kitchen environment, encouraging teamwork and professional growth. Address guest inquiries and special requests with professionalism and attention to detail. Maintain effective communication with front-of-house staff and management to ensure seamless operations and guest satisfaction. Stay updated on industry trends and culinary techniques to inspire creativity in the kitchen. Ensure compliance with company policies, safety regulations, and other legal requirements. Act ethically to uphold the company’s reputation. Perform additional duties as required.

REQUIRED QUALIFICATIONS:

Minimum of 5 years of experience as a Head Pastry Chef or Executive Pastry Chef in a high-volume culinary environment. Culinary degree or equivalent certification specializing in pastry arts. Exceptional pastry skills with a comprehensive understanding of baking and dessert-making techniques. Valid Food Handler's Card as required by local health regulations. Strong leadership abilities, capable of inspiring and motivating kitchen staff to achieve culinary excellence. Excellent organizational and time management skills, with the ability to prioritize and manage multiple tasks. Strong communication and interpersonal skills for effective collaboration with team members and management. Knowledge of food safety and sanitation practices, including HACCP principles. Ability to thrive in a fast-paced kitchen environment. Flexibility to work evenings, weekends, and holidays as needed.

PHYSICAL REQUIREMENTS:

Ability to perform essential job functions in accordance with ADA, FMLA, and other applicable standards. Must be able to lift and carry up to 50 lbs; ability to stand for extended periods and navigate a dynamic work environment. Physical capability to maneuver through work areas, including bending, lifting, and reaching.
