About our Bakery Program
RHM features a micro bakery equipped with a full production line. We are dedicated to crafting daily service breads for the restaurant, as well as breads for market sales and our sandwich program. Our bakery also produces a variety of laminated pastries for retail, along with daily offerings of quiches, muffins, and cookies.
General Overview
The Lead Artisan Baker oversees the creation of all baked goods, both laminated and non-laminated. This role involves planning, preparation, setup, and ensuring quality service in all aspects of food production.

The Role
The Lead Artisan Baker is pivotal to the success of the bakery and plays a vital role in both the market and restaurant operations. Responsibilities include daily production, staff training, maintaining quality standards, managing inventory, and collaborating with the Head Chef and Market Chef to execute bread and pastry deliverables.
Key Responsibilities
Production and Service
- Review production schedules and prioritize daily tasks.
- Prepare all menu items according to established recipes and yield guides, ensuring efficiency and quality.
- Set up workstations with necessary mise en place, tools, and supplies.
- Coordinate with the service team to ensure timely setup of all stations.
- Restock items as needed throughout the shift.
- Communicate effectively with market staff regarding production timing and customer feedback.
- Engage in ongoing training to enhance skills and knowledge.
- Support team members and assist with additional tasks as required.
- Relay important guest information to the team to ensure a seamless service experience.
Sanitation and Safety
- Adhere to state sanitation and health regulations, as well as company procedures.
- Maintain knowledge of equipment use and ensure safe operation.
- Regularly inspect cleanliness and organization of work areas and rectify any issues.
- Ensure all tools and equipment meet safety and cleanliness standards.
- Report any safety violations to the supervisor immediately.
- Follow proper storage procedures in compliance with health department regulations.

Experience and Education
- Minimum of 4 years of experience as a Baker or Pastry Chef.
- Experience with laminated doughs is essential.
- Comprehensive knowledge of bread production techniques.
- Physical ability to lift and move 50+ lbs.
- Possession of a NYC Food Protection Certificate (or willingness to obtain within 90 days).
- Availability for early mornings, weekends, holidays, and a flexible schedule as needed.
- Capability to perform essential functions under stress in a fast-paced environment.
