POSITION OVERVIEW:

The Lead Pastry Artisan is responsible for guiding the pastry team in crafting exquisite desserts and baked items that exemplify the highest standards of quality and artistry. This role involves overseeing all aspects of pastry production, conceptualizing new menu items, and ensuring adherence to food safety protocols.

KEY RESPONSIBILITIES:

  • Collaborate with the Corporate Pastry Chef to design and implement pastry menu selections, including recipe creation, cost analysis, and presentation standards.
  • Manage the pastry kitchen operations, focusing on menu development, food preparation, and artistic presentation.
  • Curate a seasonal pastry menu that aligns with Zuma's culinary vision, prioritizing fresh, premium ingredients and creative flavor profiles.
  • Supervise and mentor pastry staff, fostering a culture of teamwork and adherence to culinary excellence.
  • Educate the team on allergen management, ensuring comprehensive knowledge of safe food handling practices.
  • Maintain rigorous food safety and sanitation standards, including compliance with HACCP guidelines, to uphold cleanliness and hygiene in the kitchen.
  • Assist in workforce scheduling, managing labor expenses, and optimizing staffing to meet operational needs.
  • Work closely with the Executive Chef and management to plan and execute special events and promotional menus.
  • Monitor food costs and inventory, implementing strategies to enhance profitability while ensuring quality.
  • Conduct regular evaluations of kitchen equipment and facilities to ensure safety and operational efficiency.
  • Provide training and development opportunities for kitchen staff, including establishing a clear path for career advancement.
  • Promote a positive and inclusive workplace culture, encouraging communication and professional growth among team members.
  • Address guest inquiries and special requests with professionalism and attention to detail.
  • Ensure effective communication with front-of-house staff and management to guarantee seamless service and guest satisfaction.
  • Stay informed about industry trends and culinary innovations to inspire creativity within the kitchen.
  • Adhere to company policies and legal regulations, maintaining ethical standards to protect the company's reputation.
  • Perform additional duties as required.

QUALIFICATIONS:

  • Minimum of 5 years of experience as a Head Pastry Chef or Executive Pastry Chef in a high-volume culinary environment.
  • Culinary degree or equivalent certification specializing in pastry arts.
  • Demonstrated expertise in pastry techniques and dessert preparation.
  • Valid Food Handler's Card as required by local health regulations.
  • Strong leadership capabilities, with a talent for motivating and guiding kitchen personnel.
  • Excellent organizational skills, with the ability to manage multiple tasks effectively.
  • Strong interpersonal and communication skills for effective collaboration with team members and management.
  • Knowledge of food safety practices and local health regulations.
  • Able to thrive in a fast-paced kitchen environment.
  • Flexible availability, including evenings, weekends, and holidays as needed.

PHYSICAL DEMANDS:

  • Ability to perform essential job functions safely and effectively in accordance with ADA and other regulations.
  • Capability to lift and carry up to 50 lbs; ability to stand for extended periods and navigate a dynamic work environment.
  • Physical agility to maneuver through work areas, including bending, lifting, and reaching.
