Job Summary:

The Head Baker will oversee all bread and pastry production for Maxime's Club - NY, ensuring high-quality products and efficient operations. This role requires strong leadership and management skills, as well as expertise in pastry lamination and bread production.

Key Responsibilities:

  • Collaborate with the Culinary leadership team to develop and implement pastry and bread production strategies.
  • Oversee daily bread and pastry production, ensuring quality and quantity standards are met.
  • Manage the bread team, providing guidance and support to ensure efficient and effective production.
  • Monitor production schedules and par levels to optimize tasks and minimize waste.
  • Communicate effectively with the Executive Pastry Chef and Bakery Shop Manager to review special requests and orders.
  • Ensure operational, cleanliness, and safety protocols are upheld, adhering to company standards and regulatory requirements.
  • Uphold quality standards across the team, ensuring all production items meet rigorous standards of quality and preparation.

Business and Financial Responsibilities:

  • Monitor food cost, waste, controllable costs, labor, and other costs to optimize profitability.
  • Manage inventory and replenish stock orders as needed, adjusting par levels according to business forecast to mitigate waste and shortages.
  • Participate in or contribute to menu planning, budgeting, or inventory management exercises as needed.

Leadership and Development:

  • Contribute to effective and timely communication across the department.
  • Create and maintain departmental training materials and SOPs, ensuring team members are knowledgeable and properly trained in all processes.
  • Take initiative to maintain professional development and stay current with culinary trends.
  • Promote a positive and collaborative team spirit, building good morale and trust among direct reports through hands-on leadership.
  • Manage performance of direct reports by providing continuous feedback, recognition, coaching, or documenting infractions when necessary.
  • Maintain a strong understanding of company background, core values, and philosophy.
  • Attend and participate in meetings or training sessions as required by the Company or leadership.

Requirements:

  • A minimum of 3-5 years' prior experience in a Head Baker, Baker, Pastry Chef, or similar role.
  • Demonstrated knowledge and experience working with different kinds of breads and Viennoiserie, including pastry lamination and full range of bread production.
  • Practical knowledge of the job duties of all direct reports.
  • Team-focused mindset and empathetic approach to collaboration.
  • Excellent communication, organizational, and interpersonal skills.
  • Ability to remain calm under pressure.
  • Ability to receive and process feedback with an open mindset and make constructive adjustments in a professional manner.
  • Ability to demonstrate quick thinking and adaptability in a frequently changing environment.
  • A demonstrated leadership capacity and ability to approach tasks with creativity.
  • Must be organized, self-motivated, and proactive with strong attention to detail.
  • Current NYC Food Protection Certificate (or ability to complete certification upon hire).

Physical Demands and Work Environment:

  • Ability to be flexible with job demands and open-minded when being asked to complete tasks.
  • Ability to operate and use all equipment necessary to run the shop.
  • Ability to operate with grace under pressure.
  • Ability to work onsite at varied hours/days, based on business needs and hours of operation, which may include early mornings, evenings, weekends, and holidays.
  • Ability to stand for up to 8-10 hours a day.
  • Willingness to maintain a clean, healthy, and safe working environment.
  • Ability to work independently with minimal supervision.
  • Ability to lift and carry, push or pull heavy objects up to 50 pounds; kneel, bend, ascend and descend stairs; reach and grab objects.
  • Ability to walk, stand, and/or bend continuously and for extended periods as required to perform essential functions.
