About our Bakery Program
RHM features a micro bakery equipped with a complete production line. We are responsible for crafting daily service breads for the restaurant, as well as retail bread and a variety of baked goods for market sale. Our bakery program also includes the production of quiches, muffins, and cookies on a daily basis.
General Overview
The Lead Artisan Baker oversees the creation of all baked products, both laminated and non-laminated. This role involves planning, preparation, setup, and ensuring high-quality service across all food production areas.
The Role
The Lead Artisan Baker is pivotal to the bakery's success and plays a crucial role in both the market and restaurant operations. Responsibilities include daily production, staff training, maintaining quality standards, inventory management, and product development. Collaboration with the Head Chef and Market Chef is essential to execute the bakery's offerings effectively.
Key Responsibilities
Production Management
- Review production schedules and prioritize tasks for the day.
- Prepare all menu items according to established recipes and standards efficiently.
- Organize workstation with necessary ingredients, tools, and equipment.
- Coordinate with the service team to ensure timely setup of all stations.
- Restock items as needed throughout the shift.
- Communicate with market staff regarding production timing and customer feedback.
- Engage in ongoing training to enhance skills and knowledge.
- Assist team members whenever possible.
- Complete additional tasks as assigned by management.
- Share important guest information with the team to ensure success.
Health and Safety Standards
- Adhere to all sanitation and health regulations as well as company procedures.
- Maintain knowledge of equipment use and ensure safe practices.
- Regularly inspect cleanliness and organization of work areas.
- Ensure all tools and supplies meet health and safety standards.
- Report any safety violations to the supervisor immediately.
- Follow proper storage procedures as per health department guidelines.

- Understand and convey the values and philosophy of One White Street and Rigor Hill Market.
- Promote the brand vision and establish a reputation for innovation.
- Participate in community outreach and publicity efforts.

- Possession of a Food Protection Certificate is required.
- Willingness to work early mornings, weekends, and holidays as needed.
- Capability to perform essential functions in a fast-paced environment.
