POSITION SUMMARY

The Pastry Chef de Partie III role involves daily preparation and execution of service within the designated station. This position requires working under the supervision of a pastry chef de partie I or II, adhering to all directives provided by the lead cook. A comprehensive understanding of timelines, product requirements, flavor profiles, and dish expectations is essential during both preparation and service. The candidate should possess fundamental skills and demonstrate the ability to collaborate efficiently with team members in a focused and organized manner. This role serves as an entry-level position within the culinary brigade, ideal for individuals eager to learn and develop in a kitchen environment.

KEY RESPONSIBILITIES

  • Plan, prepare, set up, and deliver consistent, timely, and organized quality service in all areas of pastry production, with a focus on presentation standards.
  • Strictly follow recipes and standards for product preparation and presentation.
  • Exhibit proficient knife skills, basic pastry techniques, ingredient measurement, mixing methods, and safe kitchen equipment operation.
  • Conduct daily assessments of the station and products to ensure compliance with quality standards.
  • Accurately execute recipes for the assigned station.
  • Thoroughly clean and hand over the station at the end of the shift.
  • Perform general cleaning and sanitation tasks as directed by culinary management and lead cooks.
  • Undertake other related tasks as necessary.

QUALIFICATIONS

Required:

  • Fundamental skills in basic pastry techniques and knife skills.
  • A keen sense of flavor development and the ability to evaluate preparation quality.
  • A strong desire to enhance and refine culinary skills within the kitchen environment.
  • ServSafe certification within the first six months of full-time employment.

Preferred:

  • Associate's degree in culinary arts.
  • 1-2 years of professional cooking experience, ideally in a fast-paced, high-volume setting.
  • Proficiency in both English and Spanish.

SKILLS

  • Ability to work efficiently and maintain cleanliness throughout the shift while meeting all deadlines.
  • Self-motivated with the capacity to perform well under pressure.
  • Strong communication skills and practices.
  • Problem-solving abilities to address issues that arise during service.
  • Consistent preparation and presentation of food as directed.
  • Basic knowledge of product identification, international cuisine, and pastry techniques.

PHYSICAL REQUIREMENTS

  • Capability to lift up to 50 lbs.
  • Ability to stand for extended periods (8-10 hours consistently).
  • Exposure to hot surfaces, sharp utensils, open flames, and varying temperatures.
  • Willingness to work hours beyond a standard workweek.
