Pastry Sous Chef

About the Role:
The Pastry Sous Chef is a key member of our culinary team, responsible for overseeing the pastry department and ensuring the highest standards of quality and execution in all aspects of food preparation and presentation.
Key Responsibilities:
- Lead and manage the pastry team to achieve exceptional results in menu execution, food quality, and presentation.
- Develop and implement new menu ideas, recipes, and techniques to enhance the culinary experience.
- Collaborate with the culinary team to ensure seamless execution of dinner service, PM prep, and bread production.
- Monitor and control labor and overtime for the pastry team, ensuring efficient use of resources.
- Conduct regular tastings and quality control checks to ensure consistency and excellence in all pastry products.
- Develop and maintain a deep understanding of product knowledge, including ordering and inventory management.
- Provide guidance and training to junior staff members to enhance their skills and knowledge.
- Work closely with the purchasing department to ensure timely and efficient ordering of ingredients and supplies.
- Participate in menu planning and development, including creating new recipes and specials.
- Ensure compliance with health and safety regulations, maintaining a clean and organized workspace.
Requirements:
- Minimum 5 years of professional experience in a fine dining kitchen, preferably at a Michelin level.
- Proven leadership and management skills, with experience in supervising a team of pastry chefs.
- Strong understanding of ordering, cost control, labor efficiency, storage, and cleanliness.
- Excellent communication and problem-solving skills, with the ability to work effectively in a fast-paced environment.
- Associate's degree in culinary arts or equivalent experience.
- Bi-lingual in Spanish and English (desirable).
