Overview:


Oversee and coordinate the kitchen team in the sourcing, preparation, and presentation of all culinary offerings for the hotel, ensuring compliance with safety and sanitation standards while delivering high-quality, profitable products.


Responsibilities:


Direct the daily culinary operations, ensuring the production and presentation of all food items for the hotel's dining establishments and room service meet HEI Franchise standards for quality and consistency.


Manage human resources within the kitchen, focusing on attracting, retaining, and motivating staff while maintaining a safe work environment. Responsibilities include interviewing, hiring, scheduling, training, developing, coaching, and conducting performance evaluations.


Organize and oversee the maintenance and sanitation of the kitchen and equipment to uphold a healthy and safe work environment that meets or exceeds all relevant standards and regulations.


Monitor and control labor and food costs; prepare necessary reports and schedules to ensure budgetary goals are achieved while maintaining or enhancing quality.


  • Promote safety initiatives to minimize risks and associated costs.
  • Collaborate with the Executive Chef in the development, costing, and execution of seasonal and special menus.
Assume the Executive Chef's responsibilities in their absence.

Adhere to attendance policies and be available for regular shifts.

Perform any other job-related tasks as assigned.

Qualifications:
Two or more years of post-secondary education, with culinary training preferred.

Five or more years of experience in a similar role.

Experience in the hotel industry is preferred.

Requires advanced knowledge of food service principles and practices, including management of personnel and complex food and beverage operations.


Familiarity with hotel operations, including marketing strategies, safety programs, personnel relations, business planning, maintenance, budget forecasting, quality assurance, hospitality law, and long-term planning.

Strong leadership abilities to inspire and develop staff while achieving organizational goals.

Ability to perform effectively under pressure and meet deadlines.

Excellent verbal and written communication skills, with the ability to tailor communication to various audiences, including supervisors, colleagues, and the public.
