Job Summary:

Craft Culinary Concepts is seeking an experienced and skilled Executive Sous Chef to join our team at State Farm Stadium. As a key member of our culinary team, you will be responsible for assisting the Executive Chef in ensuring the highest quality food and beverage offerings while maintaining a safe and clean work environment for all employees.

Key Responsibilities:

  • Assist with schedules and coordinate the work of all cooks and other kitchen employees to ensure seamless execution of events.
  • Collaborate with the Executive Chef to plan and write menus that meet the highest standards of quality and creativity.
  • Develop and train kitchen personnel in food production principles and practices to ensure consistency and excellence.
  • Establish and maintain high standards for food preparation, presentation, and quality control.
  • Communicate effectively with the Director of Catering to ensure accurate budgeting and cost control.
  • Schedule kitchen employees in conjunction with projected event requirements and budgetary constraints to ensure optimal staffing levels.
  • Assist the Executive Chef in overseeing production and timeliness for the lofts and Club level to ensure exceptional customer experiences.
  • Develop and implement maintenance schedules for all equipment, provide safety training, and ensure compliance with all applicable health and safety regulations.
  • Maintain accurate inventory records and perform monthly inventory checks to ensure optimal stock levels.
  • Implement and enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and/or dining areas.
  • Ensure compliance with all applicable health and safety regulations and maintain a clean and safe work environment.
  • Plan and price menus to ensure profitability and customer satisfaction.
  • Perform other duties as assigned by the Executive Chef or management.

Requirements:

  • Degree from a postsecondary culinary arts training program.
  • High volume banquet and fine dining experience.
  • Excellent leadership and team development skills.
  • Experience with P&L and budgeting processes.
  • Ability to work a flexible schedule, including weekends and holidays.
  • ServSafe and HACCP certification.

Additional Requirements:

  • Ability to sustain work for extended periods and lift materials, supplies, and equipment used in the catering and concession operation.
  • Ability to work irregular hours, including nights, weekends, and holidays.
