Position: Bakery Operations Manager
Location: Owings Mills, Maryland area
Qualifications:
- High School or GED. (Culinary certification a plus). College degree preferred.
- At least 3 years of management experience in Food Production or Manufacturing. Knowledge of Sanitation and GMP, HACCP, AIB, SQF or BRC.
- Experience with Supermarket, In-Store Bakery, or free-standing Bakery. Prior experience as Baker, Cake Decorator, or Pastry Chef, a plus.
- Product Merchandising experience: building retail food displays for Bread, Buns, Muffins, Cakes, Cookies, Pastry.
- Customer Service and Production Planning experience. Recipe formulation and menu creation for Seasonal baked goods.
- P&L, Budgeting and Forecasting experience: Purchasing Ingredients and Supplies, Materials Control, Inventory, and Cost Control knowledge
Responsibilities:
- GROW SALES: Responsible for growing Sales and Profitability by producing high-quality food, varying the product mix, merchandising, in-store promotion and sampling.
- RECIPE FORMUALTIONS: Ensures recipes for all products are electronically documented with all required specifications, preparation, packaging and labeling.
- ANALYZE TRENDS: Understand industry and competitor trends (sugar free, gluten free, non-GMO, Kosher, Halal, etc..)
- CONTROL COSTS: Responsible for controlling expenses and labor while protecting Gross Profit % through effective management.
- EFFICIENCIES: Improve processes and creates efficiencies by proper scheduling to improve production that supports revenue growth.
- DOCUMENTS: Develops and maintains department manuals. Train employees. Assists in employment and termination decisions.
