Looking to escape the urban chaos? Two Cows Creamery in Hot Springs, SD is seeking an ice cream loving, quality conscious, detail oriented, food safety aware person to join its Dairy Plant team. The position is ¾ time to full time.

The Dairy Specialist position is responsible for processing incoming milk to make ice cream, gelato and sorbets as well as the ice cream mix, gelato mix, butter, cream and cultured dairy drinks produced by the company.

The Dairy Specialist position is also accountable to the customer’s food safety in these products. This includes lab testing of incoming milk, pasteurization and homogenization, making ready to eat product and bottling/packing.

The Diary Specialist mixes and pasteurizes formulas according to USDA standards and must keep careful records to document the processes.

Then the Dairy Specialist makes over 100 flavors of ice cream/gelato/sorbet tubs. Please note, this is a very physical position – the Dairy Specialist is constantly moving, lifting, bending, reaching and carrying.

Key Responsibilities:

  • Food Safety – Keep the dairy plant and work area clean and sanitary. Store foods properly, heat and cool foods properly, and handle foods properly to avoid pathogen contamination and allergen cross contamination.
  • Inventory Control – Account for all inventory used or lost during shift. Keep food inventories sealed, organized and easy to account for.
  • Inbound and outbound loading of dairy products off and onto delivery vehicles.
  • Food Preparation – Follow recipes and procedures accurately and consistently. Understand the process of pasteurization and homogenization and ensure critical temperature points are met and recorded.
  • Assemble, disassemble, clean, and sanitize processing equipment and ice cream machines.
  • Clean and sanitize all tanks, hoses, pumps and utensils according to USDA standards using protective gear.
  • Bottling and packaging of dairy products in a sanitary manner.
  • Ice cream freezing – Pouring ice cream mix and ingredients into the machine, accurately setting the controls, monitoring condition of the ice cream and extruding it into tubs while adding swirls, ripples, inclusions, etc.
  • Keep accurate records or production with dates, amounts and lot numbers.
  • Laboratory testing and recording of milk received per state guidelines.
  • General Sanitation – Clean entire dairy production room to Company standards after every shift.

Skills/Qualifications
Above all, the candidate is self motivated and has a desire to prepare high quality food. Additional requirements include:

  • Must love ice cream and other dairy products and be willing to taste every batch made.
  • Must be committed to the customer’s positive experience.
  • Must understand plumbing processes and mechanics.
  • Must be committed to food safety and sanitation.
  • The ability to adhere to a work schedule and be punctual. Can work a minimum shift of 4 hours.
  • Ability to work on your feet for an entire 6-8 hour shift.
  • Ability to lift 50 lbs to shoulder height repeatedly.
  • Prior experience in a laboratory setting is preferred.
  • Prior experience with pumps, tanks, homogenizers is preferred.
  • Familiar with weights and measures for recipes.
  • Can work with “hussle” (dairy processing can be a busy process at times).
  • Must be methodical, clean and meticulous all at the same time.
  • 1 year or more experience in a food preparation position is required.
  • At least 18 years of age.
